HOW TO MAKE A HAPPY ORANGE SNACK

What you’ll need:
• oranges (we used organic oranges, as we like to nibble the rind! If you’d prefer yours without rind, just peel off the orange skin before you slice them up)
• sharp knife
• 100g / 3.5oz melted dark chocolate (this will be enough for 2 or more oranges)
• small deep bowl
• piping bag

Steps:

1. Wash and slice oranges into 0.5cm / 0.2" thick slices. Place them on a clean tea towel to help them dry off a bit (this will help the chocolate stick to oranges).

2. Melt chocolate in a small, deep bowl.

3. Have a baking tray or board ready. Dip oranges into chocolate and place onto the tray. You can make different hairstyles for each face!

4. Pipe chocolate dots or little curves for eyes, a smile and any other face details.

5. Give oranges a quick blast in the fridge to help the chocolate harden. If it’s a hot day, store them in the fridge until you’re ready to eat.

WHOLE MANDARIN CUPCAKE RECIPE
(PEEL AND ALL!)

This recipe makes 12 little cupcakes.
No icing required.

Ingredients:
• 4 whole seedless mandarins
• 6 large eggs
• 1 tsp almond extract
• 1/2 cup raw caster sugar
• 2 cups ground almonds
• 1 tsp baking powder

Steps:

1. Preheat oven to 180°C / 356°F / Gas Mark 4. Prepare a cupcake tin with cake liners.

2. Using a scrubbing brush, wash the mandarins in warm water to remove any wax on the skin.

3. Place the mandarins in a medium saucepan and cover with boiling water. Boil until the mandarins are soft, about 60 minutes. Top up the water if it gets low.

4. Blitz mandarins in a food processor to make a puree.

5. Whisk the eggs until frothy. Add sugar, ground almonds, baking powder, almond extract and mandarin puree. Stir thoroughly.

6. Pour into cupcake liners and bake for 30–45 minutes, or until a skewer inserted in the centre comes out clean.

YUM + EASY Strawberry Banana pops!⁠

• 2 cups strawberries, chopped⁠
• 1 large ripe banana, chopped⁠
• 120g / 4oz Greek yoghurt⁠
• 1/4 cup milk⁠

EASY steps:⁠
1. Put all the ingredients in a blender and whiz together.⁠

Breakfast Biccie Recipe!
AKA Carrot, Banana and Oat Cookies

🥕🍌

Makes 12

To make the cookies, you'll need:

- 115g / 4.06oz oat flour
- 2 tsp ground cinnamon
- 1 tsp baking powder
- pinch of salt
- 75g / 2.64oz butter, cold
- 1 ripe banana
- 1 large free-range egg
- 3 tbsp maple syrup
- 1 tsp vanilla paste
- 90g / 3.17oz rolled oats
- 1 carrot (around 120g / 4.23oz), grated

You can easily make your own oat flour by whizzing up some rolled oats in a blender or food processor until they resemble flour. Try adding a handful of chopped nuts or seeds, or even shredded coconut, to these cookies too.

Steps:

1. Preheat your oven to 170°C / 325°F / Gas Mark 3.

2. Line two baking trays with baking paper.

3. Stir together the oat flour, cinnamon, baking powder and salt in a medium-sized bowl.

4. Add the butter and rub it into the flour mixture using your fingertips until the butter is well incorporated throughout the flour and the mixture becomes sandy.

5. In a small bowl, mash the banana with the back of a fork. Add the egg, maple syrup and vanilla paste, and whisk with the fork to combine.

6. Add the banana mixture to the flour mixture and stir to combine. Stir through the rolled oats and grated carrot until well combined.

7. Using a tablespoon, scoop a heaped tablespoon of the mixture and dollop it on the lined baking tray. Use the spoon to make the cookie round around the edges, and then use the back of the spoon to flatten the centre.

8. Repeat with the remaining cookie mixture, allowing room between the cookies for them to spread while they bake. The mixture should make around 12 cookies in all.

9. Bake the cookies in the oven for 25–30 minutes or until they are golden brown.

10. Allow the cookies to cool slightly on the baking tray before transferring to a wire rack to cool completely.
