Exploring the Swan River in 1827, Captain James Stirling discovered Mandoon -"place of many trees" in the tongue of local aboriginies. In 1840, the Surveyor General, John Septimus Roe, established a vineyard on its fertile banks which is today the home of MANDOON ESTATE.

It’s almost time to bid farewell to our Cab Merlot! 🥺🍷There’s not much stock left, and we won’t be making another vintage of this beauty (for now). Crafted from hand-picked fruit grown on some of Margaret River’s oldest vines, this wine is traditionally made and carefully matured in select French oak to deliver exceptional concentration, elegance and provenance. Our exquisite heirloom tomato entree is in its final weeks at Wild Swan. This beauty has the flavours of an Aussie panzanella salad, plated more like a summer trifle. La Delizia Latticini stracciatella, ginger pickled and candied semi-dried cherry tomatoes dressed with 25 year old Pedro Ximénez and bush basil. For texture: focaccia crumb and native thyme jelly. The dish is wrapped with cucumber and finished with sunrose and powdered river mint oil and Great Southern Groves olive oil infused with the dried tomato skins and fennel seeds. Come in and experience it before we bid farewell to tomato season!

Cheers to World Chardonnay Day! ✨ Chardy, as it's affectionately known, has come a long way in Australia. Tonight we’re celebrating the Mandoon Estate 2021 Reserve Chardonnay - a beautifully expressive Chardonnay from Karridale, crafted with minimal intervention to let the fruit truly shine.

Bright lemon zest, nectarine and white peach meet hints of vanilla bean, cedar, biscotti and toasted almonds, all balanced by crisp limey acidity and a long, textured finish.
