1️⃣ The Extract: Pull a double shot of a medium-to-dark Hennessy blend. You want those toasted nut and caramel notes to cut through the milk.
2️⃣ The Steam: Unlike a Cappuccino, you only want a tiny bit of aeration. Keep the steam wand just below the surface for a few seconds, then swirl to create that glossy, wet-paint look.

Here's What You Need
40mL Hennessy Coffee Espresso
150g Dark Chocolate, melted
3 Large Eggs, separated
1/4 cup Sugar
Butter and Sugar for coating ramekins

Method:
1️⃣ Preheat the oven to 190°C (375°F). Butter and sugar the insides of 4 ramekins.
2️⃣ Mix melted chocolate and Hennessy Coffee espresso. Let cool slightly.
3️⃣ Whisk egg yolks and sugar until pale, then fold into the chocolate mixture.
4️⃣ Beat egg whites until stiff peaks form and gently fold into the chocolate mixture.
5️⃣ Divide the mixture between ramekins.
6️⃣ Bake for 12-15 minutes or until risen.
7️⃣ Serve immediately with powdered sugar or whipped cream.
