We hope you have enjoyed the overview of what goes into making a bottle of fine Sparkling Wine. As you will have seen in the “10-day journey”, every step is completed here at Rickety Gate Estate Winery using our own specialised equipment. Therefore, we have complete control of every step of the process which adheres to our ethos of “No Compromises” and is evident in the very first sip of this amazing range of Sparklings. Day 10 of our journey...

Labeling and Hood Application.

The penultimate step in this lengthy process is the placement of the label, hence providing a voice to the wine. That voice would say “I’m this old, where I came from, my character and who created me”.

The ultimate step is the “Crowning process” which is the application of the hood. (see video)
This completes the adornment of this glorious product which is now ready to grace your table.

Day 9 of our journey...

Disgorging

The following is an overview of the disgorging process which is undertaken here at Rickety Gate.
A cage of bottles is placed into our cool room and bought down to around 2 degrees Celsius which assists in the retention of carbon dioxide. The bottle is inserted by hand into the neck chiller which is the machine on the left in this image. The liquid inside the neck chiller is Glycol (antifreeze), which is chilled to -25°c; after 10 minutes in the solution, a frozen plug of ice forms in the neck, encapsulating the yeast Lees.
The bottle is then moved to the next machine where the crown seal is removed. The pressure from within the bottle ejects the frozen plug of ice which contains the yeast lees, rendering the bottle free of sediment.
The bottle then is placed on the dosage machine where it is injected with a small amount of sugar, acid and sulphur dioxide.
The bottle is then moved to the large machine where a cork is inserted, then it is moved to the right to where the muselet (wire) is applied. The bottle is then washed in the machine to the right of the image using rainwater.
Next step is to put the bottles onto wooden pallets and warm up to room temperature and to dry off in readiness for the labelling and hooding process.
