This week has been a bit of a quite week with cutting 2 bodies of beef an hanging another 2.

The 2 bodies I cut up this week were absolutely superb bodies of beef. One being a grain feed Angus an the other a silage fed wyagu steer. Both had plenty of marbelling an soft to cut.

Another week done. A total of 1285kg went over the cutting board an into freezers this week plus more bodies of beef found the cold room ready for next weeks cut ups.

Days have cooled off quick a getting shorter which means the slow cookers will be getting a good work out with Osso Bucco, soup bones, diced beef an ox tails.

The last week as seen me pretty busy with more cut ups an more hangs even throwing in an emergency hang (broken leg) to add to the list.
