Thinking of travelling to Canada?
Add Parc Omega to your itinerary. We have been staying in Ottawa at Chateau Laurier ( that will be another post) and our friend drove us over to Quebec to this place ( but they do tours and hire vehicles) and holy jamoly it was amazing. You mostly drive around but there are sections where you can get out of your car and walk around. There’s loads of deer to feed and spectacular Canadian animals to see. 10/10 for a fantastic family experience.

Hello spring.
This Rainbow Salad is the perfect spring salad. Colourful, fun and tasty.

I doubled the recipe below to fill the large trifle bowl you see in my reel.

Rainbow Salad

75g broccoli florets
1 cup (145g) frozen shelled edamame
1 x 250g pack brown rice and red quinoa
200g tomato medley, halved
4 radishes, thinly sliced
1 red or yellow capsicum, diced
2 spring onions, sliced
1/4 cup fresh mint, chopped
100g roasted salted chickpeas
1/2 punnet blueberries
2 tbsp seed mix, optional

Dressing
1/4 cup apple c***r vinegar
1/4 cup extra virgin olive oil
1/4 cup maple syrup

Blanch the broccoli and edamame in boiling water for 3 minutes, then cool in iced water and drain well.

Add the rice and quinoa to your dish, then layer over the broccoli, edamame, tomatoes, radish, capsicum, spring onions, mint and chickpeas. Finish with blueberries and seeds.

Stir the dressing ingredients together, pour over and serve.

Remember, double everything if you’re making the big trifle bowl version like mine.

Easy Fudge Tarts

Ingredients

5 Mars Bars, roughly chopped
½ cup thickened cream
1½ tablespoons butter
1 packet pre-baked mini pastry tart shells

Optional decoration:
4 squares dark chocolate
½ teaspoon coconut oil
2 tablespoons crushed peanuts

Method

Pop the Mars Bars, cream and butter into a microwave-safe glass jug. Microwave on high for 1 minute, stir well, then continue microwaving in 30-second bursts, stirring each time, until the mixture is completely melted and smooth. Mine took about 2½ minutes in total.

Grab your packet of mini pastry cases, but don’t take them out of their tray — it makes them much easier to fill and pop straight into the fridge.

Pour the warm fudge mixture into each pastry shell, filling them almost to the top, then pop them into the fridge to set.

There should be enough fudge mixture to make around 10 mini tarts, although I only had 6 pastry cases. If you have any mixture left over, don’t waste it! Store it in the fridge and gently reheat it when needed…. it makes a delicious chocolate fudge sauce over ice cream.

To decorate

Place the dark chocolate and coconut oil into a small microwave-safe bowl. Microwave for 1 minute, stir, then continue in 30-second bursts until melted and smooth. Mine took about 1½ minutes in total.

Drizzle the chocolate over each tart and sprinkle with crushed peanuts.

The decoration is completely optional, but it does give them extra crunch, a little bit of saltiness and looks pretty.
