Founded by master pastry chef and chocolatier Deniz Karaca and his wife Kylie, Cuvée Chocolate began with a simple idea: bring back real chocolate, one bean at a time. From their Melbourne workshop, the team carefully crafts stone-ground, small-batch chocolate using exceptional single-origin cocoa beans sourced from around the world.⁠

Leading into Easter, we want to share the stories of the world class Australian chocolate producers behind our award-winning ChocoVino pairing experience. ⁠

From a family farm in Margaret River, husband-and-wife team Josh Bahen and Jacqui Bahen craft chocolate the slow way — stone-ground, bean-to-bar, and deeply connected to the origins of the cacao.⁠

Using restored vintage machinery and a traditional approach to chocolate making, Bahen & Co focuses on simplicity: letting exceptional cacao speak for itself. Their process is intentionally slow and cool, preserving the natural flavours of the beans and the character of the places they come from.⁠

The first grapes of the 2026 vintage are off the vine at Hahndorf Hill. ⁠

Our harvest has begun with a small block of estate Grüner Veltliner, carefully picked under the guidance of our viticulturalist Jose. Early parcels like this are always exciting - the fruit is vibrant and full of life, showing the variety’s signature natural acidity, delicate spice and bright flavour intensity.⁠

Each vintage begins with moments like these: the first bins arriving at the winery and the promise of a new season taking shape. We look forward to watching these beautiful grapes evolve as the 2026 wines begin their journey.⁠

New Vintage Release | 2025 Brother Nature Field Blend⁠

A true expression of place and philosophy. Inspired by Austria’s Gemischter Satz, Brother Nature is an authentic field blend, with 12 white varieties interplanted within a single vineyard block. Grown, harvested and fermented together, the intimacy of these varieties allows them to influence one another, harmonising ripening and flavour into a seamless whole.⁠
⁠
The 2025 vintage is beautifully perfumed with white florals, musk, juicy white peach and lychee. The palate is generous yet poised, with lifted notes of lemongrass, gentle green tea tannin and a fine, bright acidity that carries the wine through to a refreshing finish.⁠
