Hey! Today marks our local Autumn equinox. Sunrise at 7.11am and sunset at 7.11pm. The true celestial start of Autumn and the coming of Winter!
Yesterday I picked the last of our Sage for drying before it goes into hibernation. You'll get to taste it in a new range of local artisan venison sausages we make from the garden up! All natural and truly delicious! Coming this Autumn!

In coincidence with Kosciuszko Wild Venison breaking through our 10 TEN THOUSAND KILOGRAMS PROCESSED target! The Honorable State Member for Monaro, Steve Whan paid a visit. We discussed Meat Safe TAFE Training opportunities at the new Jindabyne campus, curriculum additions we'd like to see added to the Game Harvester course, local employment, opportunities for local business (A Black Wattle Bark based tannery would be awesome?!) And then it was hands-on cryovacing our 4-patty burger packs. With the on-going assistance and support of all our Monaro residents and businesses, we hope to build an industry that places Jindabyne at the very center of the burgeoning Australian Wild Venison movement. Thank you MONARO FOLKS!!!

Hi. An important clarification.

A Jindabyne resident came to see me at our Leesville shop yesterday. Wasn't terribly happy with the two hamburger patties his partner had bought thinking they came from me. We only make branded KWV 4-burger packs and bulk commercial boxes. Turns out they were bought at an establishment in Jindabyne Central.

Kosciuszko Wild Venison would like to make it absolutely Blue Lake clear that we have no affiliation with the current owners of that establishment, nor do we have any affiliation with the Shikaku venison brand they are promoting. Shikaku is located at Sanctuary Point NSW which is over 4 hours drive northeast of Jindabyne near Nowra.

Kosciuszko Wild Venison does not use 2nd or 3rd party carcase dealers.

We employ here, harvest here and process here in Jindabyne. Full stop.
