Chips and dip are so boring. WOW your friends with these colourful and tasty additions to your nibblies this festive season.
BAKED POPPERS
50g feta
90g vintage cheddar, grated
100g cream cheese
1 tsp garlic powder
1 tsp onion powder
1 tsp chilli powder (optional)
2 packets Oh Sweet! Baby Capsicums, halved and deseeded
Preheat oven to 170 degrees Celsius.
Place all cheeses and garlic and onion powder into a food processor and process until smooth.
Place halved capsicums on a baking paper lined tray (slice the bottoms to help sit level if need be).
Carefully fill them with the cheese mix.
Place into oven for 15 minutes or until the tops begin to brown.
Serve hot or cold.
PHILLY CHEESE WITH ROASTED CAPSICUM SAUCE
1 tub cream cheese
1 packet Oh Sweet! Baby Capsicums, cored and deseeded
¼ - ½ cup extra virgin olive oil
Pinch of salt
80g pine nuts, toasted
Preheat oven to 180 degrees Celsius.
Combine capsicums, oil and salt in a bowl then turn out onto a baking paper lined tray.
Bake for 20-30 minutes until completely soft and beginning to really colour.
Cool slightly then place cooked capsicums into a food processor with pine nuts, pulse while adding olive oil. Add as much or as little as you like, just until a consistency like pancake batter is reached.
Turn cream cheese out onto a plate and top with capsicum sauce.
Serve with crackers.
ROASTED CAPSICUM
2 packets Oh Sweet! Baby Capsicums (keep whole)
Olive oil to drizzle
Flaked sea salt
1 tsp paprika
Pepper to taste
Preheat oven to 180 degrees Celsius.
Place capsicums onto a baking paper lined tray. Prick each one with a knife.
Bake for 25-30 minutes until completely softened.
Cool then place into a bowl, add oil, salt, paprika and pepper. Combine well then place capsicums onto a cheese platter as a delicious alternative to dried fruit.
