Today we are tasting through different barrels of our 2024 Single Vineyard Merlot, exploring structure, fruit and balance before deciding the final blend.
Every barrel tells a slightly different story — some bring rich plum fruit while others add spice and structure.
The art of blending begins🍷

Ever wondered how wine blending works?
Our winemaker is currently tasting multiple barrels of 2024 Merlot, carefully evaluating:
• aroma
• tannin structure
• fruit intensity
• balance

Small trial blends are created before deciding the final wine that will go into bottle.
It’s a bit like composing music — every barrel is a different instrument.

2025 Wisp And Bloom Riesling🌼

comes from a very warm and dry year. Despite the resulting lower yields , the quality was widely regarded as very good for white grapes like Rieling which displays clarity and varietal expression✅

It shows notes like an elegant wisp of blooms like honeysuckle, lime zest, crisp nectarine and subtle wet stone. The hallmark of crispy acidity drives a lively and invigorating finish🥂

Our mouth-watering, elegant and aromatic Riesling is ready to enjoy upon release. It is perfect with seafood like blue swimmer crab, King George Whiting or Spencer Gulf prawns and Asian delights like pork dumplings or Vietnamese cold rolls🥟🍤
