Recipe of the Month. 🦞✨

Moreton Bay Bug Casarecce — a dish that has been ordered time and time again, and now you can make it at home.

Fresh Moreton Bay Bug tails are available in store right now, so grab yours and give this one a go this weekend.

What you will need:

🦞 4 to 6 fresh Moreton Bay bug tails, meat removed and cleaned
🍝 400g casarecce pasta
🧈 60g unsalted butter
🧄 1 clove garlic, finely chopped
🍋 2 tbsp fresh lemon juice plus lemon zest
🍷 1/4 cup dry white w**e
🥛 1/2 cup thickened cream
🥗 1 handful fresh rocket leaves
Salt, black pepper and optional chilli flakes or salmon roe to garnish

Here is how to make it:

Cook the casarecce in salted boiling water until al dente. Drain and set aside, keeping a splash of pasta water.

Heat olive oil and half the butter in a large pan over medium-high heat. Sear the bug meat for 1 to 2 minutes per side until just opaque and tender. Remove and set aside.

In the same pan, add the remaining butter and garlic. Cook for 30 seconds until fragrant, then deglaze with white w**e and let it simmer for a minute.

Stir in the cream and lemon juice and let the sauce simmer gently for 2 minutes until slightly thickened. Season with salt and pepper.

Add the cooked pasta and bug meat back into the pan and toss gently through the sauce. Fold through the fresh rocket just before serving so it slightly wilts.

Plate up, garnish and enjoy. 🍋🦞
