Collagen wrap sheets are a man-made alternative to using beef bungs for Capicola, Pancetta or Prosciutto. Rather than sewing or forcing the muscle into a natural casing, cut the sheet to size and simply wrap along with the spices. Tie or net off and voila.

In amongst all the chaos of the last couple of weeks we now have a limited number of locally sourced beef bungs available in New Zealand to purchase. They may not be online just yet but feel free to message through if you want us to put some aside. Pacific Casings and The Casing Boutique have officially been considered an essential part of the primary food chain with respect to Covid-19. We have been working closely with our staff and local health authorities to implement procedures to ensure we can continue the production and distribution of sausage casings in a safe manner. Throughout this time all orders, including those online, will continue to be fulfilled and sent out in a timely manner. There is no admittance to our factories during this time. Over the past month our production has been working overtime to keep up the demand from butchers and wholesalers around the world so please be patient if there are some delays. We hope you remain safe and observe all the Covid-19 contact minimisation procedures reccomended by the relevant authorities!

Known by many casings operators worldwide, Pops has worked within the industry his whole life along with many of his family, only retiring in his 70’s with the biggest ❤️ + 💪🏼. Being a part time yoga teacher has seen him outlast staff half his age 🦵🏾all the best with your recovery!!!
