How do you eat Leatherwood honey?

The simple answer; however you like.

Its bold, floral flavour makes it just as good drizzled as it is eaten straight from the spoon. Stir it through yoghurt or porridge for a rich aromatic sweetness, or spread it over warm toast so it melts in and shines through. It also pairs beautifully with cheese boards, especially sharp or creamy styles where its distinctive Tasmanian character can stand out.

For drinks, try it in tea or warm lemon water; just don’t overpower it, as Leatherwood carries its own unique depth.

However you enjoy it, Leatherwood honey isn’t just a sweetener; it’s a flavour experience from Tasmania’s wilderness.

Rueben Charles OAM — A Legacy in Tasmanian Beekeeping

Rueben Charles OAM was one of the quiet architects behind Tasmania’s world-renowned leatherwood honey industry. A beekeeper, innovator, and industry pioneer, he dedicated his life to building a commercial beekeeping operation that helped shape the modern Tasmanian honey sector.

In 1995, Rueben Charles was awarded the Medal of the Order of Australia (OAM) for his service to the beekeeping industry; a national recognition of his contribution to Australian apiculture. His work helped elevate Tasmanian honey onto the global stage at a time when the industry was still developing its export markets and quality standards.

Alongside his wife Beryl, Rueben helped grow a commercial apiary that would become part of the foundation of what is now a multi-generational family legacy. His early commitment to quality, scale, and professionalism helped position Tasmanian honey; particularly leatherwood as one of the most distinctive honeys in the world.

Today, his name lives on through the Rueben Charles Memorial Trophy, awarded annually for the World’s Best Leatherwood Honey at the Tasmanian Beekeepers Association conference. It remains one of the most respected honours in the Australian honey industry, recognising excellence in a honey unique to Tasmania’s wild, temperate rainforests.

Rueben’s legacy continues to be felt across the industry; in the standards he helped establish, the pathways he helped create for export, and the recognition Tasmania now holds as a premium honey-producing region.

A life dedicated to bees, forests, and the craft of honey. We are forever grateful and proud of the work you achieved.

World Bee Day 2026, celebrates all things bees, and here are some fun facts we love to share:
1ļøāƒ£ Close to 75% of the world's major food crops benefit, to some extent, from pollinators, particularly fruits, vegetables and nuts. šŸšŸ„‘šŸ„•šŸ„œ
2ļøāƒ£ In Australia, the contribution of honey bees to agriculture through pollination services is valued at around $14.2 billion.😁🧮
3ļøāƒ£ AHBIC is the peak national body for Australia's 40,000 registered beekeepers, who manage over 820,000 honey bee hives! šŸšŸÆ
This World Bee Day, become a friend of AHBIC (https://honeybee.org.au/about/donate/) as an ultimate support for Australia's beekeepers, you'll help us advocate for a more sustainable, secure and prosperous honey bee industry here in Australia.

Happy World Bee Day!

Today we celebrate the tiny pollinators that play such a vital role in our environment, food systems, and biodiversity.

At Blue Hills Honey, we are grateful to see this every day. Protecting bees means protecting the landscapes they depend on.

So here’s to our hardest workers; the bees.

Last week we had the opportunity to attend the CSA Direct2Store Expo alongside Spreyton Cider Co

It was fantastic to connect with retailers, showcase our Tasmanian honey range, and share the story behind Blue Hills Honey and the wild Tarkine wilderness where our honey is gathered.

A huge thank you to everyone who stopped by for a chat and a taste of Tasmania. We loved meeting so many passionate people in the industry and are excited for what’s ahead.

There’s a kind of wilderness that can’t be recreated; it has to be experienced.

Deep within Tasmania’s untouched landscapes, far from roads and noise, the air is clean, the forests are ancient, and nature moves at its own pace. This is where our bees forage; among wild florals, towering trees, and some of the most pristine environments on earth.

Our Wilderness honey captures exactly that; raw, pure, and shaped entirely by the environment it comes from. No shortcuts, no interference; just nature, as it should be.

From the wilderness to your table šŸÆ
