Cauliflower Quinoa Salad with Sriracha Ginger Tahini Sauce

Cauliflower Quinoa Salad with Sriracha Ginger Tahini Sauce (meant to serve 1 for a meal or can be split into smaller side salads)

Sauce (omg this was so delicious)
1 tbsp tahini
Juice of half a small lemon
Pinch of salt
1/4 tsp ground ginger
1/2 tsp garlic powder
1/4 tsp paprika
2 tsp sriracha
1 tsp maple syrup (optional)
2 tbsp or more water to thin out

Combine sauce ingredients and whisk together until smooth and creamy.

Salad (for one - adjust amounts as you desire)
1-2 tsp oil
1 cup small cauliflower florets
1/4 cup asparagus, cut into 2 inch sticks
1/2 tsp garlic powder
1/2 cup cooked quinoa
1 cup edamame (thawed)
1-2 cups romaine lettuce
Scallion for garnish
Salt and pepper to taste
Sauce

In a sauté Pan heat up oil and add cauliflower florets. Cover with a lid and allow to sear over medium low heat for 2-3 minutes then flip and cook on the other side. Add asparagus and cover again to sear for another 2 minutes. Remove lid, add garlic and a pinch of salt and pepper and sauté for another 3-5 minutes, checking to see the tenderness of the cauliflower. The. Remove from heat.

To assemble your bowl, add romaine, quinoa and top with cauliflower, asparagus and your thawed edamame. Pour your sauce overtop and sprinkle with some scallions and extra salt and pepper to taste. ( #📷 )

Taco pinwheels. 🌮

Get to the kitchen and start making these taco pinwheels. 🌮 They are fluffy and the perfect appetizer for entertaining this summer. Mix and match with some different dips like vegan cheese sauce, fresh salsa, or guacamole. So the real question is, which dip would you enjoy these pinwheels with?

Taco Pinwheels

Dough
1 cup warm water
1 packet of yeast
2 tbsp organic sugar, divided
2 cups onedegreeorganics Organic Sprouted Spelt Flour
1 cup all-purpose flour + extra flour for rolling out 1 tbsp cornstarch
1⁄2 tsp salt
2 tbsp olive oil

Filling
1 cup Vegan Taco Meat 1⁄2 cup Salsa
1 cup vegan cheese

In a microwave safe mug add water and 1 tablespoon of sugar then place in the microwave for 15 seconds to warm up.Add your yeast to the water, mix and let stand for 5 minutes to activate.

To a bowl, add in your remaining dry dough ingredients and mix well, then add in your yeast mixture and oil then give a good mix to form a dough. Cover the bowl with a clean cloth and place in a warm spot to rise for 45 minutes. Sprinkle a clean flat working surface with flour and lay your dough down. With a rolling pin, flatten your dough to a rectangular shape. To the surface spread on your salsa, sprinkle with the vegan taco meat and then layer on with cheese.

Starting from one end, start to tuck and roll your dough into a log shape. Using a sharp knife, cut the log into 16 even pieces. Place these pieces into 2, 9inch x 9inch greased baking dishes, making sure you give space in between for the dough to rise. Cover the baking dishes with a towel and allow to rise for 30 minutes while preheating your oven to 375F. Place the buns into the oven for 15-17 minutes until the tops are golden. Allow to slightly cool before serving. ( #📷 )

Tofu Tikka Masala

Tofu Tikka Masala⁠

Tofu Nuggets (optional) - feel free to just pan fry with some salt and pepper if you are short on time⁠ or switch to chickpeas and season with the recommended spices (leave out the yogurt)
2 blocks tofu, pressed and torn into chunks⁠ (1 block = 450g)
1/2 cup plain dairy free yogurt
1/2 tsp ground turmeric
1 tsp garam masala⁠
1 tsp ground cumin⁠
1/2 tsp coriander⁠
Juice of 1 lemon⁠
2 tbsp soy sauce⁠
1 inch fresh ginger, grated⁠
2 cloves garlic, minced⁠

Preheat oven to 400F. In a bowl add all ingredients except tofu and whisk together to combine. Add tofu chunks and carefully toss together using a spatula. Place pieces on a lined baking sheet and bake for 15 minutes. Flip pieces and then bake for an additional 10 minutes then set aside. ⁠

Tikka Masala⁠
1/2 medium onion, diced⁠
3 cloves garlic, minced⁠
1 inch ginger, grated⁠
2 tsp ground cumin⁠
1 1/2 tsp garam masala⁠
1 tsp chili powder⁠
2 tsp coriander⁠
1/4 tsp cardamom⁠
1/4 tsp cayenne pepper (optional)⁠
1 15 oz can crushed tomatoes⁠
1 cup water
1 15 oz can full fat coconut milk⁠
1 tbsp sugar⁠
Tofu Recipe Above⁠

Start by sautéing onion in a pan over medium heat with a pinch of salt, cook until translucent. Add in garlic and ginger and sauté again until fragrant. Add a splash of coconut milk or oil and add cumin, masala, chili, coriander, cardamom, and cayenne and sauté until fragrant. Add in tomatoes, water and sugar. Bring to a low simmer, cover with a lid and cook for 10 minutes. Stir in coconut milk and then fold in your roasted tofu chunks. Cook for an additional 5 minutes and then serve with some basmati rice.⁠ ( #📷 )

Superfood Chocolate Bark = 😍😍😍 Have you ever made chocolate bark? Such a simple treat! I love adding in chia seeds, goji berries, pretzels, and nuts!

INGREDIENTS:

• 1 bag (12 oz) vegan chocolate chips
• 2 tablespoon chia seeds
• 3 tablespoons dried goji berries + 1 tablespoon for topping
• ¼ cup pretzels, roughly chopped + ½ cup whole pretzels for topping
• ¼ cup raw pecans, roughly chopped + ¼ cup whole raw pecans for topping

DIRECTIONS:

In a small bowl, melt the chocolate. You can do this using a double boiler or in a microwave.

Once melted, add in the chia seeds, 3 tablespoons of goji berries, ¼ cup of broken pretzel pieces, and ¼ cup of roughly chopped pecans. Mix well until everything is evenly incorporated.

Pour chocolate into a baking dish (approximately 12 inches x 8.5 inches) lined with parchment paper or a silicone liner. Using a spatula, smooth out the chocolate to create a thin even layer about ¼ inch thick. The chocolate should be chunky and won’t lay flat—that’s okay, as long as there’s enough chocolate to hold everything together!

Top with remaining goji berries, pretzels, and whole raw pecans. Use your finger to gently push all the toppings into the soft chocolate until partially embedded so everything will stick when the chocolate hardens.

Set in the fridge to harden for 1 hour. Once hard, remove from the fridge, break into pieces by hand, and serve! ( #📷 )

5 Ingredient Apple Crisp - A delicious dessert that comes together quick with few ingredients you probably have on hand.

5 Ingredient Apple Crisp
1 small apple, sliced thin
1 tbsp brown sugar, divided
2 tbsp runny tahini or 1 tbsp butter or oil
1/2 tsp cornstarch
1/3 cup rolled oats

Optional: pinch of cinnamon, pinch of salt, juice of half a lemon for the apples

Preheat oven to 350F. In a oven safe dish, add apple slices, corn starch, 1 1/2 tsp brown sugar (add cinnamon, lemon and salt if desired). Combine and toss together and set aside to fix crumble. In a separate bowl combine oats, remaining brown sugar and tahini (add cinnamon and a pinch of salt if desired). Mix well to coat oats and then top oats over apples and place in the oven for 15-20 minutes to fully cook apples and crisp up oats.

Allow to slightly cool before removing from the oven. Then top with ice cream or yogurt. Totally your call! 🙌🏽

The ingredients are also pretty easy to swap. Not a fan of granulated sugar? Swap for maple syrup. Don’t have cornstarch? You can leave it out or sprinkle a little flour in place of it. ( #📷 )

Buffalo Pizza
Pizza Dough (store bought)
Buffalo Pizza Sauce
Soy Curls
Vegan Cheese
Scallions
Diced Yellow Onions

Buffalo Curls
1 cup soy curls
Hot water
1/2 vegetable bouillon or 1/2 tsp vegetable bouillon paste
1 tbsp soy sauce
1 tsp cornstarch
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp smoked paprika
1/4 cup vegan Buffalo sauce

Buffalo Pizza Sauce
2 tbsp tahini
Juice of half a lemon
2 tbsp vegan buffalo sauce
2-3 tbsp water
2 tsp maple syrup

Set oven to 400F. Make your soy curls by adding the soy curls to a bowl and rehydrating with hot water, enough to cover them. Add the bouillon and soy sauce and allow to sit for 5-10 minutes to soften. Drain the soy curls and gently squeeze out as much liquid as possible. Coat with cornstarch and seasonings and sauté in a pan to further remove liquid and firm up the soy curls. After a few minutes add Buffalo sauce and sauté until lightly browned.

No soy curls? Feel free to sauté your chickpeas with Buffalo sauce then use to top your pizza with. No need to soak with broth and soy sauce.

Combine sauce ingredients and thin out as desired then set aside.

Roll out your pizza dough and spread sauce over the top then sprinkle with cheese, diced onions, add the soy curls pieces. Add some more vegan cheese and place in the oven for 13 minutes. Let pizza rest and then cut into slices and top with scallions. ( #📷 )
