Wise Wines was established in 1991 by biochemist Dr Ron Wise. Our flagship range, Eagle Bay Wines, is an expression of our magic vineyard and is made from estate grown fruit. For our other ranges, our winemakers select fruit from WA’s premier cool climate viticulture regions. This freedom allows them to match the best grower for a particular varietal.

A little bold. A little unexpected. And for a limited time, just $60 at our Cellar Door.

Our Shiraz Gin brings together the rich fruit character of Margaret River Shiraz with the bright botanicals of a premium gin, creating a spirit that’s as unique as it is versatile.

One of our favourite ways to enjoy it? As a Bloody Sour — silky, citrusy, and beautifully balanced, with a striking ruby hue that turns heads before the first sip.

Ingredients:
75ml Wise 2022 Shiraz Gin
30ml Lemon Juice
15ml Simple sugar syrup
15ml egg white
 
Method
Add all ingredients into a cocktail shaker.
Dry shake (without ice) for 10 – 15 seconds.
Add ice into shaker. Shake again for 20 seconds.
Strain (double strain if possible) into a chilled martini glass.
Garnish with freeze dried raspberry or edible flower petals.
