Roasted Purple Cauliflower Soup

This recipe uses arborio rice like my last posted recipe- so if you tried that one you should have some left over you can use it this recipe! I don't use refined grains very often, but it works well here to thicken the soup without having to cook if for 45 minutes and add lots of cream or butter, like you might find an a cauliflower bisque. Purple cauliflower is only usually available at specialty markets - so if you cant find it, use 2 heads of white.

Ingredients:
1 Head Purple Cauliflower
1 Head White Cauliflower
Olive Oil
6-7 cups Veggie Stock
1/4 cup Arborio rice
1/4 c Natural Coconut Milk from a can or 2TBS Butter
4 oz Frozen Peas
Sea Salt

Preheat oven to 400 degrees. Wash Cauliflower and trim into Medium sized florets. Place on a sheet tray (or large bowl) and toss with olive oil, spread evenly on the tray, and roast in the oven for 15 minutes or so until browned.

Place the florets into a medium pot with 4 cups of stock and rice, and bring to a boil, cover, and lower to simmer for about 20 minutes until rice is very soft. Puree the contents in a food processor in batches, processing until somewhat smooth, but leaving some larger chunks to give the soup some texture. Add more of the reserved stock as needed to process, and return to the pot on the stove, adjusting the constinancy, again, with the remaining stock. Bring to a boil, stir in coconut milk or butter (or both!- I just used coco milk), and add peas. Simmer for a minute more and remove heat, adjust seasoning with Sea Salt.

Ingredients:
1 med. eggplant, (or 2 or 3 small Japenese Eggplants) cut in 3/4"cubes
Sea Salt
Olive Oil
2 TBS coconut oil (or otherl)
2TBS butter or Ghee
4 cups veg. stock (can use water or other stock)
1 Large onion, small diced
1 inch fresh ginger, peeled, minced
4-5 cloves of garlic, peeled, minced
1 TBS Turmeric
2 tsp coriander ground
2 tsp cumin ground
3/4 cup arborio rice
1 can chickpeas, drained.
1 bunch fresh cilantro, chopped
2 Med. Heirloom Tomatoes, Cored and Diced

Procedure:
pre-heat oven to 375. toss eggplant generously with salt and 2-3 tbs of olive oil. roast on a sheet pan in the oven 20-30 minutes -or until browned and softened.

while eggplant is in the oven, heat coconut oil and butter/ghee in a skillet. Add veggie stock to a seperate pot and heat until hot- you are going to use this to make the rissoto. in the skillet, saute onion, garlic and ginger on med heat (not too high so the garlic burns) about 15 minutes or so, until very soft. add spices (turmeric, coriander, cumin) and saute a few minutes to 'bloom' the spices. add rice, and saute about 2 minutes, then add a ladle-full of the stock. cook until most of the liquid has evaporated, stirring frequently, then add another ladle of hot liquid, stirring frequently. continue this process until the rissoto is 95 percent done (about 12 minutes- very soft but still a small chew to it), then add in the roasted eggplant and chickpeas, cooking several minutes more to incorporate, adding more liquid as necessary, and remove from heat. Stir in Heirloom Tomatoes and top with cilantro.
