I was asked this week what excellence in hospitality is? For me it's not about looking super flashy, trendy or spending the most money on super expensive ingredients. For me it’s about connection, making every guest feel like they’re with someone who truly cares. It means noticing the little things, active listening, anticipating needs, and going the extra mile so people leave happier than when they arrived—and eager to talk about what they've just experienced or even come back to another one.

My family taught me something obvious (not so much for others): hospitality workers must be hospitable. Must be professional. And know when taking control of the service and others.. step back and keep checking the pulse of the night. My years in hospitality showed me what I was capable of doing as a one man band chef: cooking, serving food, entertainment, cracking a few jokes, engaging with someone interested in your food, storytelling, etc..
