Did you know the perfect Highlands stop‑in is hiding right on your route?
The Lawrenny Cellar Door is open 10am to 4pm, 7 days a week, welcoming travellers as they move through the Tasmanian Highlands.
Whether you’re heading for the waterfalls of Mt Field, the adventure trails of Maydena, the river bends of New Norfolk, or making the long scenic journey toward Strahan, Lawrenny is a beautiful pause along the route; a moment to take in the estate, enjoy the view, and warm up with a tasting of our grain‑to‑glass wh**ky or premium gin crafted right here on the property.
If you’re roaming the Highlands, make Lawrenny your stop‑in.

Cask sampling is one of the most quietly powerful parts of wh**ky making; where patience, oak, and time finally meet human judgement. At Lawrenny, every barrel is tasted individually, not just assessed by numbers. We nose for structure, sweetness, and the tiny shifts in aroma that tell us how the spirit is breathing through the timber. We taste for balance, depth, and the way the oak is shaping the final character.
It’s slow work, individually sampling and analysing each barrel; but this is the heart of maturation management, guiding each cask toward its peak, and knowing exactly when it’s ready to step out into the world as Lawrenny wh**ky. **ky **ky **ky

The change of season marks the start of the next cycle of maturation. As the barrels begin to warm, the spirit expands deeper into the oak, drawing out flavour and character as the wh**ky continues to soften and mature.

Stored within our on site bond stores, the barrels experience gradual temperature changes throughout the year. This slow seasonal movement encourages a gentle, measured maturation, allowing flavour and complexity to develop over time.

First signs of spring on the Estate and it's time to prepare this year's crop. The paddocks are coming back to life up after winter and it's starting to warm up - just. Our own barley with our own fresh water all adds to the character of our wh**ky.

Juicy raisins on the nose with deep cigar box underneath. Spiced, rich and warming. The palate opens with fortified character, red apples, leather, charred oak and nutmeg. The finish is long and decadent as honey roasted cashews, burnt sugar and five spice drift off.

Our previous Port Cask release received a Double Gold in the San Francisco Awards and we are equally as pleased with this one.

Deep in colour and flavour. Sweet and rich but well balanced. Our Heritage Single Malt Wh**ky has been a fan favourite ever since it was launched in 2023.

A harmony of Australian Apera and Spanish Sherry casks filled with our new make spirit with its honey drizzled nectarine profile. This is more than just a "sherry bomb", we take a lot of care to maintain a delicate balance between the juicy Pedro Ximenez and Apera casks to the dry nutty notes delivered by the Oloroso casks.

Our "Living" Solera process not only adds consistency batch to batch but also adds yet another layer to the profile of Heritage. The 2000L solera system is comprised of decades old PX and Oloroso casks which impart a final dollop of sherry complexity to the wh**ky as it passes through. This solera system contains the oldest wh**ky at Lawrenny and will continue to as we never let each barrel dip below half full.

This has been and will remain one of our favourite releases.

Every barrel of Lawrenny Single Malt develops its own character over time. Some of that comes from the barley we grow ourselves, some from the water from the Upper River Derwent, some from the cask, the climate and the oak.

This release comes from an exceptional ex Port cask and we're proud to bottle it as part of our Cellar Collection.
