I don’t think a w**e needs to be complicated to be interesting. 🍷

For me, the best w**es are often the ones that simply make sense when you taste them.

They don’t need to be loud.
They don’t need to show you everything at once.
And they certainly don’t need to make you work too hard to understand them.

I’m looking for balance. ⚖️
I want the variety to still feel like itself.
I want something of the season and the place to remain in the glass. 🌿
And I want there to be enough there that you notice something new when you go back for another sip.

That’s what keeps a w**e interesting to me.
Not complexity for the sake of it.
Just a w**e with something worth coming back to. ✨

Have you ever thought about all the decisions that take a grape from vine to w**e? 🍷

Take picking, for example.
From the outside, it can look simple. The grapes are ready, so you pick them.
In reality, there is a lot more judgement involved. 🌿

The question is not just are they ripe? It is whether the fruit is showing the balance, flavour and character you are looking for, and whether the season is telling you it is time to move.

That answer can change from one vintage to the next.

Some years ask for patience. Others move quickly. And sometimes the right decision is simply knowing when not to wait any longer. ⏳

It is one of those parts of w**emaking most people never see, but it can shape everything that comes after.

Before fermentation.
Before maturation.
Before a label ever goes on the bottle.

Many decisions have already been made in the vineyard about what that w**e might become.

That is part of what keeps w**emaking interesting, even after decades of doing it. Every season gives you something different to respond to. 🍇

Ever tried a w**e you thought you didn’t like… only to love the same grape from somewhere else? 🍷
There’s a reason for that.

The same variety can taste remarkably different depending on where it’s grown. Temperature, soil, rainfall, altitude and the season all influence what eventually ends up in your glass.

That’s why David puts so much focus on understanding the site, working with what it gives him, and letting each variety show what it can do there.

So if you’ve decided “I don’t like Shiraz” or “Chardonnay isn’t for me”, it might be worth trying one from somewhere else before you write it off completely.

Hunter Valley Shiraz is one of them.

For us, w**e has always been made to be enjoyed this way: opened over a meal, passed around the table and shared with good company.

Hunter Valley Shiraz has plenty of character, but it doesn’t need to take over the conversation. A good meal can bring something different out in the w**e, while still letting the food have its moment too.

Good food. Good company. A bottle on the table. Sometimes w**e doesn’t need to be more complicated than that.

For David, the journey with Italian varieties began when a neighbour asked him to make Pinot Grigio.

It wasn’t some grand, carefully mapped-out plan.

There was fruit in the vineyard, an opportunity to make something from it, and a conversation that brought the two together.
That’s the part of the story we like most.

That first Pinot Grigio became part of a much bigger chapter for David Hook W**es, but it started with something simple: a neighbour, a planting, and a shared idea.

Sometimes the best w**e stories begin long before the bottle. They begin with the people around it. 🍷

What did David bring home from making w**e overseas? 🍷

Working in unfamiliar vineyards, different seasons and different ways of making w**e gave David another way of looking at the Hunter Valley when he returned.

The lesson wasn’t to copy what was being done elsewhere.
It was to pay closer attention to what was happening here.

What suits this site?
What is the season giving us?
What should we leave alone?
And where is there room to try something different?

That way of thinking has stayed with David through decades of vintages. Experience doesn’t mean having every answer. Sometimes it means knowing which questions are worth asking.
