First time in history. 🇨🇴🇪🇹

Back in October 2025, we visited the incredible EL VERGEL ESTATE farm in Tolima, Colombia, for a origin trip that blew our minds. Right on the cupping table, we experienced something truly unprecedented: Yirgacheffe and Ethiosar, Ethiopian varieties planted and harvested in Colombian soil for the very first time.
The result? Absolute flavour magic. Wild floral aromatics meet rich South American complexity.

These micro-lots are extremely limited and easily the most exciting coffees from our trip. If you’re obsessed with rare origins and groundbreaking flavour profiles, you don’t want to miss this batch.

Yirgacheffe, but not quite where you’d expect it. 🌍

This coffee starts with a varietal best known from Ethiopia and ends up in the mountains of Tolima, Colombia — grown and produced by Shady & Elias Bayter at El Vergel Estate.

It’s a great example of how much a coffee’s character can change when you take a familiar genetic variety and give it a completely different home. 🌱

The Bayters fermented the cherries for 72 hours before carefully drying them in their controlled Nuna dryer, creating a cup that’s incredibly expressive without losing its clarity.

Think bergamot, apricot, lemongrass and sour cherry 🍋🍑🌸 — vibrant, layered and unmistakably floral.

2 down, 2 to go. 🌍☕️

The first two of four Simon’s World Brewers Cup coffees events are officially done — and what a turnout it’s been. ❤️

Sydney was our first time hosting an event at Booth Waterloo The Booth Waterloo , and the crowd, energy and engagement were incredible. Then back in Melbourne, it was amazing to see so many familiar faces return, along with so much curiosity and excitement around Simon’s World Brewers Cup journey 🏆

What makes these events so special is seeing how much people connect with the competition side of coffee. Competition pushes us to question what’s possible, experiment, improve and ultimately move the whole industry forward 💯

And we couldn’t be prouder of Simon. Seeing him share so much of what went into his World Brewers Cup preparation — from the coffees he selected to the thinking behind his routine — and watching those little sparks in people’s eyes as they discover something new has been pretty special. ✨

Thank you to everyone who came along, tasted with us and made these first two events so memorable. 🙌

Brisbane & Gold Coast — we’re coming for you in just under two weeks. 👀

🚨 MELBOURNE EVENT UPDATE 🚨

Unfortunately, Simon has been feeling unwell and won’t be able to travel to Melbourne today, so we’ve made the difficult decision to postpone the Melbourne World Brewers Cup Tasting Tour by 24 hours.

We know this is a last-minute change and understand it may be disappointing, but we’re really looking forward to bringing this tasting to Melbourne and making it a special evening with Simon.

📅 New date: Thursday, 13 August
⏰ 5–7pm

All existing tickets have been automatically updated to the new date, and everyone who purchased a ticket has been informed via email.
