Today, our very own Simon steps onto the world stage at the World Brewers Cup in Brussels, representing Australia — and we honestly couldn’t be prouder ❤️

Simon is such a huge part of the Zest team and getting to witness the journey behind this moment has been incredibly inspiring. From travelling across the globe, sourcing and exploring amazing coffees, endless preparation, education, and constantly pushing himself to improve — his passion for coffee goes far beyond competition 🌍🌱

His impact on our team and the wider coffee community doesn’t go unnoticed, and seeing all of that work come together on one of the biggest stages in coffee is something really special.

A little studio update ☕️✈️ 🇧🇪

Our Richmond studio will be temporarily closed from Monday ‼️ 22 June while team Zest heads to Brussels for World of Coffee.

We’ll be back and operating as normal from Thursday 2 July 🗓️

This year is a special one for us — we’re heading over to support Simon as he represents Australia on the world stage at the World Brewers Cup.

A***n will also be joining the event as a WBrC judge (he won’t be judging Simon 😅), while Sergii is stepping away from his usual studio duties to document the trip and help keep things moving on the ground and keep everyone Slightly
over-caffeinated 😉

If you’ve been meaning to grab retail beans or swing by for a coffee, make sure to visit us before the end of this week.

Wholesale operations remain unchanged and all of our wholesale partners will continue to be looked after as usual ☺️

We’re incredibly excited for Simon, excited to share a bit of behind-the-scenes from Brussels, and we’ll also be announcing our Zest Brew Bar takeover at the Option-O stand soon — pouring some of our favourite coffees.

This is our first coffee from Jhonatan Gasca 🍒 🍫
 
If you’ve followed coffee competitions over the last few years, there’s a good chance you’ve already come across his coffees. Jhonatan has built a reputation for producing some of Colombia’s most exciting lots, with coffees finding their way onto competition stages all around the world.
 
This particular lot is a Pacamara from Finca Zarza in Huila, Colombia.
 
In the cup, think Cherry Ripe, raspberry jam, malt and red plum. Rich, vibrant and packed with flavour, but still beautifully clean.

Genius? Heresy? Somewhere in between?

We’ve spent the last few months exploring a simple idea:
☕ Use downtime to prepare.
⚡ Use peak time to serve.
Instead of pulling every shot during the rush, what if cafés used quieter periods to batch espresso, then served consistently delicious coffee in seconds when the queue hits?

The goal isn’t replacing baristas 💡

The goal is using labour, equipment and workflow more effectively.

Look who’s back on stage again 👀🔥

Simon is competing this Sunday at the NSW/ACT Regional Round of the Community Coffee Championships ( ) in Brewers Cup — officially kicking off his 2027 competition season.

Already the 2026 Australian Brewers Cup Champion, Simon will be representing Australia in Brussels at the World Brewers Cup during World of Coffee in just 4 weeks 🇦🇺🌍☕️

But he’s not slowing down there.

Simon is stepping straight back onto the competition stage and bringing some seriously exciting coffees with him 💯

For more than 10 years, Simon’s dedication to constantly improving and evolving in competition has continued to inspire the entire team at Zest. His commitment, passion, and drive push all of us to keep getting better every day.

Sydney Café & Coffee Show recap 🕺

THANK YOU, Sydney! — we had so much fun brewing, chatting, and showcasing our coffees while meeting so many of you in person.

Big thanks to for providing the machine, and to for getting the grinders sorted — this made the bump in and bump out so easy!

Also, a huge thank you to everyone who stopped by to say hi, to for keeping us hydrated, and to for the delicious signature drinks 😋

While coffee is our main focus as a business, we’re always fascinated by how much influence the food industry has on the coffee industry and how closely the two support each other.

Congrats to all the competitors and winners who took part in the events throughout the show! But the most important one for us is still coming up this weekend, where and will compete at NsW regionals Brewers Cup ☕️
