ients, no preservatives or stabilisers are used and they are made daily to ensure freshness. Chocolate has enjoyed a romantic journey over the years and has its roots in Aztec culture where it was originally consumed unsweetened. The Spanish Conquistadors took this "Chocktyl" back to Europe and over the years it has been sweetened and refined to the product it is today. Chocolate is made from cocoa beans which are primarily grown in equatorial areas around the World. The bean is husked, crushed and highly refined with sugar, cocoa butter and milk powder (depending on the style). There are three types of chocolate, dark (cocoa mass, sugar and cocoa butter), milk (cocoa mass, sugar milk powder and cocoa butter) and white (cocoa butter, milk powder and sugar). There are also two distinct styles of chocolate product, couverture and compound chocolate. Couverture chocolate has a high cocoa butter content and needs to be tempered, a process which stabilises the cocoa butter. Couverture is only used by high quality chocolatiers around the World. Compound chocolate has the cocoa butter removed and replaced with a more stable vegetable style fat and does not need tempering. Compound is less expensive than couverture but does not have the fine eating qualities that discerning chocolate lovers look for. Chokeby Road chocolates only uses fine quality couverture and the centres contain only the freshest chocolate, cream with no preservatives or artificial flavours. We make over 60 different chocolates and truffles in many sizes and shapes - all are handmade in our Perth premises. Chocolates are made daily and exported to other states and are consumed on international flights, hotels, restaurants and on cruise ships.
