Started baking in 2015 and all I want to do everyday after work is to bake. Making cakes/desserts that my friends/family like and ask for is something that I enjoy! Happy birthday to my dearest sister. Celebrated it by making some yummy Malva pudding. I first got introduced to this amazing dessert by one of my closest friends, Preethi who alwayssss gave me some whenever she made. Then after seeing .lum 's reel, I just had to make it and got so tempted. After several months of not baking at all, made this beauty. I tweaked the recipe a bit by using raspberry jam instead of apricot and made the anglaise using rose and vanilla tea infusion. All in all, this is one amazing dessert and tastes like a South African version of Indian gulab jamoon 😍😍

**Carrot Cake**
Baked Carrot cake for the first time. I would eat carrots raw than carrot cakes usually, but thought I'll give this a try. I hate how dry this cake is in shops, so I made sure it's super moist, that was my only priority. Couldn't believe how much I loved this one πŸ’– Also, this was for my dad's birthday, although slightly delayed πŸŽ‚

*Strawberry Swiss role*
Something special for our anniversary (belated)! I always keep reminding myself to bake for every special occasion, but sometimes I miss out on things. This time I baked even it was a bit later so that I keep up with my intent 🀩 I am so glad I did though, this tasted amazing!
I filled this with a homemade strawberry chia seed jam that I made with honey and raw sugar! I love making jams and I can't resist eating them out of jars. But this time, I decided to use some in a different way than just having with bread 😁
Swiss roles hardly take time to make. They are so light and "feels healthy" according to my husband. They look so pretty too. What's not to like ❣️ So take some time out of your busy schedules, pause, bake and gobble it up. Your day will surely brighten up πŸ™‚

*Key Lime Mini Pie*
I didn't check with my husband what he wanted for his birthday, I go with things I haven't made much before and do something different for each birthday. But gladly, he loved it more than anything, or atleast that's what he says 😍We have shared 3 of these in 1 day, so that could only mean one thing!! I kept it relatively simple by not bothering with whipped cream as this itself was absolutely amazing!

Finding perfection in imperfections!
Somehow, I convinced myself that this is a less scary dessert, for the lack of flour, but the sugar managed to scare me enough when I tasted it.
Then I reminded myself to reduce any recipe's sugar quantity by half. Also, I followed every step of the baking procedure, but ended up with a cracked meringue - call it the meringue's fussy mood πŸ˜†. I couldn't even pull it off from the parchment. I have made pavlovas before, but this time it felt like it's something unknown to me and I had no ideas to fix. I made passionfruit curd though and that was a delight, so I do have something to call perfect amidst this mess.
Any meringue dessert is tricky, it doesn't always co-operate, but this was supposed to be easier than macarons, but see what happened. Our take away is, nothing ever happens the way we want at the time we want, but we can always find a ray of happiness in it, like the overall taste, or the passionfruit curd πŸ˜€ Btw, it did taste like pavlova, with an amazing crusty shell and a marshmallowy centre that was like a pillow. So, all forgiven for cracking up like that 😁

**Chocolate Truffles**
When you want to start going healthy but you still have big batches of ganache in the freezer - you try to turn them into fudge - then once that fails you eventually turn them into truffles. But let me tell you, these are some Kickass truffles, so no regrets there! 😍
Since my ganache had heavy cream, it didn't firm up into fudge. I mixed in some condensed milk, toasted chopped pecans and cook it till silky and added some Amaretto liqueur before pouring into a square pan to set it. Lesson learnt - Do this only if you are melting chocolates, not pre-made ganache, it has fat in the form of heavy cream that prevents firming up beyond a level. But if you are doing with ganache, roll them into truffles and coat them with cocoa. They taste out of the world, so silky and smooth and chocolatey! Can't say how many went into my mouth while I was making (in the name of taste test ofcourse πŸ˜†). Measurement was close to none - I didn't measure my ganache at all, I used 1.5 tins of condensed milk - so if you want real measurements follow some YouTube videos πŸ˜„

This month was just raining birthdays in my family. So I made this for all of us, but because I wasn't interested in a sugar recipe, I made a sugar-free, dairy-free, gluten-free almond cake. Some of you would be like just throw it away, it is not cake. Well, it was a try and it tasted good. So I have no regrets and you wouldn't too if you try it πŸ˜‰
I also made a sugar free lemon curd to go with it. This cake is very mildly sweet so I needed some tanginess on the top to blind that. Overall my husband and I really loved it and he even asked for second serves right away. I froze some for craving calls. Recipe is on highlights for both the cake and lemon curd.
You can surely alter sweetness to your liking guys, but off late I haven't been able to eat too much sweet at once and I prefer mildly sweet desserts, mostly milky desserts like the flan my hubby made for my bday. I know I have changed. I am reserving the extremely sweet desserts for restaurant eating πŸ˜„ Try this and see if you will like - absolutely nothing unhealthy about it (defeats the point of a cake, but tastes good so who cares)

Another year done! Atleast I am still in my 20's 😁 More than the year itself, 's Flan gave me more joy for the entire year put together ❀️ I am thankful for a hubby who loves food as much as me and tries hard everyday to cook and impress 😍 Usually I bake for my own birthday, but for a change this year I decided not to and he stepped in and took up the challenge!
I specifically asked for Flan this birthday since it's one of my absolute favorites! It was sooo good 😊❀️ We kept it really simple with some berries, because the taste is all in the Flan! A sweet birthday indeed!

Sorry for 2 days in a row, but this was not done by me so I had to post even quicker 😁. is fairly new to baking. Although the croissants were store bought, the filling and process was detailed enough and this was his first time baking something sweet for me. His first dessert baking experience was for his workplace when he made Nankhatais. This is special for me since he is terrified of baking but wanted to do something for me ❀️😁 Thanks to for the amazing recipe

**GLUTEN FREE NO SUGAR BANANA BREAD**
I am not baking much these days, but I couldn't resist trying something out with extremely ripe bananas. I stopped eating bananas long back when I knew they had too much sugar. But then I had to buy some now and I bought a lot and they went too ripe. So I made this with some random ingredients I had. I wanted to carefully skip flour so I was a little worried how it will turn out. But it became a very moist and delicious bread (more of a cake which doesn't need frosting, I should say). I have used dates and maple syrup to sweeten a bit and I think the dates adds to the soft texture too well. I'll post recipe on stories, along with substitutions to make them vegan/eggfree, pls try it out ❀️
