The danger of learning to make your own bagels is discovering you can make your own bagels. 🥯
Another sourdough experiment that may have earned itself a permanent place in the kitchen.
Golden and chewy, then topped with smoked salmon, cream cheese, red onion and capers.
Some experiments are considerably easier to evaluate than others.

Meanwhile, inside the farmhouse… 🍞
Winter temperatures don’t only slow down the orchard.
Our sourdough starter has been getting a little help too.
A warm spot, flour, water and time, and suddenly it’s much happier.
There seems to be a recurring theme around here: whether it’s pistachio trees or sourdough starter, sometimes you just need the right conditions and a little patience.

Getting ready for spring. 🌱
Before the pistachio trees wake from winter dormancy, there’s work to do.
John has been out in the tractor applying a preventative orchard spray to help protect the trees from fungal disease ahead of bud burst.
It’s one of those jobs that happens long before there’s anything exciting to harvest — but good seasons begin with the work done now.
The orchard might still look asleep, but spring preparation is well underway.

Winter at The Pistachio Patch.
The orchard is quiet at this time of year.
No leaves, no clusters of pistachios and no harvest machinery moving through the rows. The trees are dormant, storing their energy before another growing season begins.
It can look as though nothing is happening.
But on a farm, quiet rarely means nothing is happening.
Spring preparation has already begun.

These funny-looking little things have a job waiting for them. 🌱

Our chokos are already starting to throw shoots, ready to be planted out when spring arrives.

The plan is to grow them across the chook yard, along with grapevines, creating a living green canopy and some much-needed shade for the girls through our hot Swan Hill summers.

Food for us. Shade for the chooks. And hopefully a very green chook yard.

That’s our kind of garden planning. 💚

Someone forgot to tell the strawberries it’s winter. 🍓

Fresh flowers, tiny fruit forming and plenty more buds coming through.

We weren’t expecting another little show from these plants just yet, but we’re certainly not complaining.

One of our favourite things about growing food is that the garden doesn’t always stick to the plan.
