The S Barossa Shiraz is built on a simple product truth: patience and a focus on structure.

Inside our working winery, the focus remains on the details that define small-batch production. For this Barossa Shiraz, it is the deliberate management of tannin structure and the quiet time allowed for the wine to find its balance.

We are opening the cellar door for seated tastings on Saturday 13 and Sunday 14 June. It is a relaxed way to explore the current releases in the environment where they were shaped.

Found this in a quiet corner of the cellar tonight. A 1997 Adelaide Hills Pinot Noir, one of the first wines I made at uni.

No label, and an easy one to walk past. Fruit from Henschke’s Giles Block, Rob Coote’s Leland Estate and Lenswood Research Centre.

The cork crumbled a bit, but there was very little ullage. Colour still good. A bit flat when first opened, then after 15 minutes it started to show more.

Maraschino cherry, spice, leather, red fruits and a little grilled meat. Good acidity still there. Fine tannin.

Pretty happy with how it’s standing up. Three bottles left.
