Senior Winemaker Jez is making the trip up to Perth at the end of June to share his love of wine and great food.

On Sunday, 28 June, Jez will host three intimate gatherings at : a wine-paired lunch, an informative masterclass with nibbles and a delectable four-course wine-paired dinner. Each event will feature a curated line-up of Fermoy Estate wines, including our award-winning 2020 Reserve Cabernet Sauvignon, named Best in Show at the Decanter World Wine Awards.

Winter has taken over; misty mornings, bonfires smoulder in every paddock, curls of smoke rise from chimney tops and puffer vests remain firmly over jumpers. Soon the falls will spill and the Wilyabrup Brook will run again.

The vines stand bare and gnarly as pruning continues, the slow, necessary work that keeps yields balanced and disease pressure low. Dormancy is essential after the rush of vintage, giving the unseen root system time to rest, recover and build strength for the next cycle of growth.

We are delighted to release our 2025 Chardonnay.

The aromatics are elegant and expressive, opening with white peach, grapefruit and rockmelon, complemented by white blossom, lightly toasted cashew and a subtle chipped‑shell complexity.

The palate is focused and refined, offering impressive tension as delicate stone fruit and citrus flavours are balanced by a savoury seaspray minerality and succulent natural acidity. Toasted nuts and gentle oak spice frame a fine phenolic crunch, flowing through to a long, mouth‑watering finish.

Enjoy alongside homemade gnocchi — light, fluffy and textural — finished simply with butter, sage and parmesan.

The 2025 Chardonnay is now available to purchase online or through our Cellar Door.

Hal reckons there’ve been no off days since February. Mazy Star, Nick Cave, Royal Otis, PJ Harvey, Bob Dylan — and a healthy dose of doof‑doof — on rotation. Coffee and hot cross buns for breakky; lunch is sausage sizzles, homemade burgers, or, if we’re lucky, a chicken parmi. No off days since February; it’s that time of year.
