Maize (/meɪz/ MAYZ; Zea mays subsp. mays, from Spanish: maíz after Taino: mahiz), also known as corn (North American and Australian English), is a cereal grain first domesticated by indigenous peoples in southern Mexico about 10,000 years ago. The leafy stalk of the plant produces pollen inflorescences (or "tassels") and separate ovuliferous inflorescences called ears that when fertilized yield kernels or seeds, which are fruits. The term maize is preferred in formal, scientific, and international usage as a common name because it refers specifically to this one grain, unlike corn, which has a complex variety of meanings that vary by context and geographic region.
Maize has become a staple food in many parts of the world, with the total production of maize surpassing that of wheat or rice. In addition to being consumed directly by humans (often in the form of masa), maize is also used for corn ethanol, animal feed and other maize products, such as corn starch and corn syrup. The six major types of maize are dent corn, flint corn, pod corn, popcorn, flour corn, and sweet corn.[6] Sugar-rich varieties called sweet corn are usually grown for human consumption as kernels, while field corn varieties are used for animal feed, various corn-based human food uses (including grinding into cornmeal or masa, pressing into corn oil, fermentation and distillation into alcoholic beverages like bourbon whiskey), and as feedstocks for the chemical industry. Maize is also used in making ethanol and other biofuels.

Maize is widely cultivated throughout the world, and a greater weight of maize is produced each year than any other grain. In 2021, total world production was 1.2 billion tonnes. Maize is the most widely grown grain crop throughout the Americas, with 384 million metric tons grown in the United States alone in 2021.[citation needed] Genetically modified maize made up 85% of the maize planted in the United States in 2009. Subsidies in the United States help to account for its high level of cultivation of maize and its position as the largest producer in the world.

Wheat is a grass widely cultivated for its seed, a cereal grain that is a worldwide staple food. The many species of wheat together make up the genus Triticum; the most widely grown is common wheat (T. aestivum). The archaeological record suggests that wheat was first cultivated in the regions of the Fertile Crescent around 9600 BCE. Botanically, the wheat kernel is a type of fruit called a caryopsis.

Wheat is grown on more land area than any other food crop (220.4 million hectares or 545 million acres, 2014). World trade in wheat is greater than for all other crops combined.

In 2020, world production of wheat was 761 million tonnes (1.7 trillion pounds), making it the second most-produced cereal after maize.Since 1960, world production of wheat and other grain crops has tripled and is expected to grow further through the middle of the 21st century. Global demand for wheat is increasing due to the unique viscoelastic and adhesive properties of gluten proteins, which facilitate the production of processed foods, whose consumption is increasing as a result of the worldwide industrialization process and the westernization of the diet.

Wheat is an important source of carbohydrates. Globally, it is the leading source of vegetable protein in human food, having a protein content of about 13%, which is relatively high compared to other major cereals but relatively low in protein quality for supplying essential amino acids. When eaten as the whole grain, wheat is a source of multiple nutrients and dietary fiber.

In a small part of the general population, gluten – the major part of wheat protein – can trigger coeliac disease, noncoeliac gluten sensitivity, gluten ataxia, and dermatitis herpetiformis.

চাল বা চাউল হলো ধানের শস্যল অংশ। ধান থেকে চাল উৎপাদন করা হয়। জলে চাল ফুটিয়ে ভাত রান্না করা হয় যা ভারত , বাংলাদেশ ও পাকিস্তান সহ বিশ্বের অনেক দেশের প্রধান খাদ্যশস্য।

ধান (Rice) Graminae গোত্রের দানাশস্যের উদ্ভিদ Oryza sativa। ধান উষ্ণ জলবায়ুতে, বিশেষত পূর্ব-এশিয়ায় ব্যাপক চাষ হয়। প্রাচীন চীনা ভাষার Ou-liz শব্দটি আরবিতে Oruz ও গ্রীক ভাষায় Oryza হয়ে শেষে Ritz ও Rice হয়েছে। ধান বা ধান্য শব্দের উৎপত্তি অজ্ঞাত। ধানবীজ বা চাল সুপ্রাচীনকাল থেকে লক্ষ লক্ষ মানুষের প্রধান খাদ্য। চীন ও জাপানের রাজাদের পৃষ্ঠপোষকতায় প্রায় ১০,০০০ বছর আগে ধানচাষ শুরু হয়েছিল বলে জানা যায়। ব্যাপক অভিযোজন ক্ষমতার দরুন ধান উত্তর কোরিয়া থেকে দক্ষিণ অস্ট্রেলিয়া, এমনকি সমুদ্রপৃষ্ঠ থেকে ২,৬০০ মিটার উচ্চতায়ও (জুমলা, নেপাল) জন্মায়। আউশ, আমন অথবা বোরো হিসেবে প্রায় সারা বছরই বাংলাদেশে ধানের চাষ হয়।

পৃথিবীর মোট জনসংখ্যার শতকরা প্রায় ৪০ ভাগের ক্যালরি চাহিদা মিটায় ধান। বাংলাদেশ, মায়ানমার, শ্রীলঙ্কা, ভিয়েতনাম ও কাম্পুচিয়ার প্রায় ৯০% লোকের প্রধান খাদ্য ভাত।
