Synthetic Meat - Food 5.0
Very interesting the February article of this year of wired magazine, which gave me the opportunity for this article.
The initial point of attention was production for tasting a foie gras pâté in San Francisco, California.
Important: the marketing of pâté de foie gras, natural and inhuman (for goose, of course! ) is banned in California.
The tasting occurred, and successful, because pâté in question was produced in laboratory.
Yes food produced in laboratories but not necessarily synthetic (at least so far).
But let us be immediately prejudiced by the laboratory and synthetic terms.
If we find today normal to eat almost 8 grams of trans fats in a small pot of 100 grams of microwave popcorn, surely this pre-concept should not exist.
Just to remember, trans fat brings harm such as the increase in bad cholesterol (LDL) and decreased good cholesterol (HDL), which increases the risk of cardiovascular disease and stroke. Furthermore, this type of fat is also related to an increased risk of infertility, Alzheimer's disease, diabetes and some types of cancer.
Returning to labs, my greatest interest is in the beef market.
Important Point: I'm not a vegetarian.
But I am aware of the enormous environmental damage that the dynamics of this market today cause.
14,5 % of global greenhouse gas emissions, 17 litres of water consumed for the generation of only 1 kg of beef, 70 % of the land deforested of the Amazon (pasture and plantations for production) And so on.
What we want is that our senses of vision, smell and taste convey to our brain the information of a tasty and nutritious meat.
Its molecular origin, since healthy, of course, will not matter.
"meat" processing centres of 10 thousand square meters, who knows, will be able to produce the same as today we need 70 thousand square kilometers (20 thousand heads year)!
Or, even more futuristic, use your 3 D printer to "Print" your meat at home, thus decreasing the logistical impact.
Let us be positive, because this advance will certainly hurt enormous economic and political interests.
Companies with American just and finless food have already started this process.
I hope that Brazilian startups will also join this movement soon.
