Blueberry Streusel Cake
1/2 cup light tasting oil
1 cup sour cream or plain Greek yogurt
1 1/4 cup brown sugar (tightly packed)
2 eggs room temperature
1 tsp vanilla
2 cups All Purpose Flour (spoon leveled)
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 1/2 cups blueberries (fresh or frozen)If using frozen, only stir minimally to incorporate, otherwise it will turn the batter purple.
Topping
1/2 cup melted butter
1 1/4 cup All Purpose Flour
3/4 cup brown
Glaze
3/4 cup icing sugar
1 Tbsp milk/water
1/2tsp Vanilla
Preheat oven to 350°F
Line a 9" springform pan with parchment paper.
1.Mix together sour cream and brown sugar until smooth.
2.Add eggs (lightly beaten),Vanilla, baking powder, baking soda, and salt. Mix until smooth.
3. Add flour, Mix until combined.
4.Toss blueberries with a little bit of flour before stirring into cake batter. This helps keep the berries a little more suspended.
5. Spread batter into prepared pan.
Streusel Topping
1.Melt the butter.
2.Stir in flour and sugar to form a crumbly muxture.
3.Sprinkle the crumble mixture over the cake batter already in the pan.Use your fingers to help crumble the mixture and sprinkle it.
Place the cake in the oven and bake for 1 hour to 1 hr and 15 mins. Until a toothpick comes out with only a moist crumb, not wet. The exact time varies with different ovens. Make sure to not over cook.
Once out of the oven cool on a rack for 15- 20 minutes before releasing from the pan.
Once mostly cooled, make your glaze and using a spoon, drizzle the glaze over the cake.
Now, enjoy! This cake slightly warm with a side of vanilla ice-cream is also a treat.
