Filipino Chicken Curry is a delicious dish that combines tender chicken, vegetables, and a creamy curry sauce. Here's a simple recipe for you to try 🍗😋

Ingredients:
500 grams boneless chicken, cut into bite-sized pieces
2 tablespoons cooking oil
1 large onion, finely chopped
3 cloves garlic, minced
1 large potato, peeled and cubed
1 large carrot, peeled and sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
1 cup green peas (optional)
2 tablespoons curry powder
1 can (400ml) coconut milk
1 cup chicken broth
1 tablespoon fish sauce (adjust to taste)
Salt and pepper to taste
Steamed rice, for serving
Instructions:
Prepare the Chicken:
Season the chicken pieces with a bit of salt and pepper.
Sauté the Aromatics:
Heat the cooking oil in a large skillet or pan over medium heat.
Add the chopped onion and cook until translucent.
Add the minced garlic and sauté for another minute until fragrant.
Cook the Chicken:
Add the seasoned chicken pieces to the skillet and cook until they turn white on all sides, about 5-7 minutes.
Add Vegetables:
Add the potato and carrot cubes to the skillet. Cook for another 5 minutes, stirring occasionally.
Introduce Curry Flavors:
Sprinkle the curry powder over the chicken and vegetables. Stir well to evenly coat everything.
Incorporate Coconut Milk:
Pour in the coconut milk and chicken broth. Bring the mixture to a gentle boil, then reduce the heat and let it simmer for about 15-20 minutes, or until the chicken is cooked through and the vegetables are tender.
Add Bell Peppers and Peas (Optional):
Add the sliced bell peppers and green peas (if using) to the skillet. Cook for an additional 5 minutes or until the peppers are slightly softened.
Season and Adjust:
Stir in the fish sauce. Taste and adjust the seasoning with salt and pepper as needed.
Serve:
Serve the Filipino Chicken Curry hot over steamed rice.
Note:
You can adjust the level of spiciness by adding more or less curry powder.
Feel free to customize the vegetables according to your preference.

Ingredients:
2 boneless, skinless chicken breasts
1/2 cup soy sauce
1/4 cup sake (or white wine if unavailable)
1/4 cup mirin (a type of sweet rice wine)
3 tablespoons sugar
2 cloves garlic, minced
1-inch piece of ginger, grated
2 tablespoons vegetable oil
Sesame seeds and chopped green onions for garnish (optional)
Instructions:
Prepare the Sauce:
In a small saucepan, combine soy sauce, sake, mirin, sugar, minced garlic, and grated ginger.
Heat over medium heat and stir until the sugar is completely dissolved.
Bring it to a gentle simmer and let it cook for about 10 minutes, or until it has thickened slightly.
Set aside.
Prep the Chicken:
Slice the chicken breasts into thin, even pieces. This helps the chicken cook evenly and absorb more flavor.
Marinate the Chicken:
Place the chicken pieces in a shallow dish or a zip-top bag.
Pour half of the teriyaki sauce over the chicken, making sure each piece is coated.
Allow the chicken to marinate for at least 30 minutes. You can leave it in the fridge for a few hours if you have the time.
Cook the Chicken:
Heat the vegetable oil in a large skillet or wok over medium-high heat.
Once the oil is hot, carefully add the marinated chicken pieces. Discard the used marinade.
Cook for about 2-3 minutes per side, or until the chicken is cooked through and nicely browned.
Add the Sauce:
Pour the reserved teriyaki sauce over the cooked chicken.
Let it cook for an additional 2 minutes, allowing the sauce to thicken and coat the chicken.

Transfer the chicken to a plate and garnish with sesame seeds and chopped green onions if desired.
