What is the aesthetic of Flavour?

I have found myself marveling at times about why it is that a beautifully presented meal or cocktail somehow tastes better.

We're visual creatures. We eat with our eyes!

Science has proven our brains light up more, drive more enjoyment, when we think an experience is supposed to be special.

And that begins before you ever take a sip or bite.

My friend recently put out the third edition of the and it's a visually stunning exploration of the concept: The Colour of Flavour.

I feel honoured to have contributed a short piece in the final segment of the magazine, delving into the use of the infamous E150 - Spirit Caramel in whisky.

No complaints on anything and a delicious exploration overall.

I realize this has ZERO % alcohol...BUT...I have a great reason for sharing.

Every February does their , and this year there are more than 150 entries!

A while back I was introduced to as a barista pop-up. I got chatting with them and discovered they do specialty, luxury coffee experiences at their place in Inglewood.

As someone who loves exploring taste and flavour and the unexpected, I was completely blown away!

So when I learned they had an entry in the , I knew it would be a must try!

It starts with liquefied 65% dark chocolate with whole milk. Then they add a Williams Pear emulsion, served with an almond tuile for scooping, and top it with a dusting of dark chocolate shavings. Once you get down about halfway, the final accouterment: minced ginger.

To call it an "experience" doesn't even begin to do it justice.

Just go try it while you can!

Date night at , and we started off with a Old Fashioned and a Chocolate Orange Espresso Martini πŸ₯°β€οΈ

Dinner was fantastic (as always), but the drinks were the cherry on top...or is it the bottom, because we started with them?

I dunno...but all was fantastic and good time was had by all...and the drinks were a lovely highlight to the evening.

Saturday Night's All Right For...🍁WHISKY🍁!

And what a line-up, too!

A while ago my friend Sammy, , asked if I would consult on a Canadian Whisky Tasting for a fundraiser he was helping to coordinate with his friend Tracey, , in support of the Canadian .

I may have an opinion or two about the subject of our home-grown spirits, so I quickly agreed.

After a few short discussions, we started to form a plan and then he asked if I would help present.

Of course!

When it comes to tastings, there's no shortage of options for how to lay things out.

For this event, we focused on exploring Western Canada through the lens of different grains, and we did it "Noah" style, marching the whiskies in, two-by-two!

Couldn't have asked for a better way to spend my Saturday!

One of the things I love to do, especially for smaller, intimate events, is to keep things conversational. I'd rather abandon my plans so I can chat about the things that matter to the people in the room.

And we definitely went down some twisty, interesting side chats.

What a lonely evening, spent with absolutely amazing people.

I don't venture too far off the spirits path very often, but Port is one of those categories I enjoy exploring.

A big part is because I LOVE what Port casks can bring to whisky.

But how do you truly learn what a cask can bring to your spirit? You need to explore the source.

Even if you aren't much into wines or beers, if you're serious about spirits, it's important to step off your beaten path, take a side quest, and level up your overall experience.

Thursday night and I'm still blown away by the Flavours of Canada Tasting put together by for !

While we didn't have Guiness checking, we're pretty sure this is the largest online Canadian Whisky Tasting ever hosted.

πŸ₯ƒ More than 100 logins, with several folks hosting watch parties.
πŸ₯ƒ A formal replay with additional tasting sets was planned for a whisky club to celebrate this week.
πŸ₯ƒ An after-stream conversation/impromptu Distillery Industry Rojndtable that lasted another 3 HOURS!
πŸ₯ƒ And the YouTube post is picking up steam (video is posted to the Canadian Whisky Week website...see Link.Tree in Bio)!

I'm honoured to have taken part and proud of everyone who made it happen.

Reece and were the consummate hosts, ensuring all participants had the opportunity to shine.

The tasting spanned a wide breadth of Canadian Whisky, with everything from traditional Canadian-Style blended to 100% Rye to both Peated & Unpeated Single Malts.

And with all that, we barely scratched the surface.

Can't wait to see what happens next year!
