Incorporate Egg & Water:With the processor still running, pour in the lightly beaten egg, followed by the water — adding just enough for the dough to come together into a ball.Tip: The dough will be sticky to the touch from the xanthan gum but should still feel sturdy. 4. Knead & Smooth:Wrap the dough tightly in plastic wrap and knead it gently through the wrap for 1–2 minutes (think of it like kneading a stress ball).The dough should become smooth and mostly free of cracks — a few small cracks are fine.If needed, return the dough to the food processor and pulse in more water, 1 teaspoon at a time, until the desired consistency is reached. 5.
