A fresh and delicious cider cocktail for spring! Cause why not have a little fun with your cider! Made with honey from who keeps bees at my parents farm (they wander over to our house for sure)

Sparkling Bee’s Knees

1 oz Gin
1 oz honey surup
1/2 oz lemon juice
1 oz Windy Ridge Cider

Shake gin, honey syrup and lemon juice with ice.
Strain into glass.
Top with cider.

Enjoy!!

*to make honey syrup, mix equal parts honey with boiling water. Stir until dissolved. Then let cool before making cocktail. I typically make 1/4c honey and 1/4 water and save the extra in the fridge

Did you know Woodfolk Orchards is a regenerative farm? Here’s some photos from over the years, it’s grown a lot! We have a huge diversity of apples and pears, with over 56 varieties here at the moment. Some may come and some may go. We are always exploring what grows well and how that translates to the glass.
Our orchard is farmed regeneratively. What does that mean? Only organic inputs, and lots of compost and wood chips. Hopefully our own animals one day too (right now we just get manure from down the road). We mow infrequently (max 5x a year) and selectively. Always leaving unmowed sections for creatures to find refuge and food in.
The goal here is to create not just an orchard, but an ecosystem. Allowing nature to thrive and working with it to promote a healthy orchard. Not only does this benefit the environment, and our love for bird watching, but it makes rich and nutrient dense apples perfect for our cider.

A little throw back Thursday if that’s still a thing. Stumbled across this picture from a few years back. It brought back a whole lot of memories from a wild year building a cidery with two little kids running around. I thought it was a beautiful little snippet from what seems like a lifetime ago.
