Talking about Szechuan Food, Szechuan Hot Pot is an absolute ‘can’t-miss’. Just as the name suggests, Hot Pot involves a pot on a heating source throughout the entire dining process, like Fondue. But instead of cheese and bread, Szechuan Hot Pot uses spicy chili broth in bright red color and a variety of raw food ingredients such as thinly sliced beef and mutton, seafoods, tofu and vegetables. These ingredients are added into the red hot broth for boiling, before getting picked out, dipped into some sesame paste and eaten. Soaking in the chili broth and dipping sauce, the food ingredients taste spicy, creamy and full of flavors. Apart from creating great taste, this unique ‘self-serving’ ritual integrates cooking as part of eating, making Hot Pot a fun and sociable dining experience. To accommodate different palates, more options have been invented for the pot and the broth, such as ‘Yin-Yang Pot’ which is one pot divided into 2 parts with red (spicy) and white (non-spicy) broth at each side. Hot Pot is beyond doubt the most popular food across China, demonstrated by a total of over 580,000 Hotpot restaurants in China in 2020, which is six times the number of burger joints in the US (91,990). Poached Fish Fillet in Spicy Chili Oil provides a glimpse into Szechuan food, which boldly uses chilies, peppers, garlics and other spices to give an unforgettable culinary experience of vibrant red color of the dishes, and their pungent and intense taste. The way to cook Poached Fish Fillet in Spicy Chili Oil is relatively simple. The fish fillets are marinated, boiled and then put on top of a layer of bean sprouts. What creates the magic is the next step - heating up the oil to the smoking point with red chilis, Szechuan peppers and garlic, and pouring it onto the fish filets, as shown in the video below. The chili oil is the heart and soul of the dish. Its spiciness makes the dish so addictive that you just can’t stop eating it. Want to challenge your palate? Consider ordering Poached Fish Fillet in Spicy Chili Oil at East Kitchen!

If you like Sweet & Sour Pork, you probably will like Guo Bao Pork too. It is a variant of Sweet & Sour Pork originating from Northeastern China. Compared to Sweet & Sour Pork, Guo Bao Pork uses bigger pieces of meat coated with a different Sweet & Sour Sauce made of sugar, rice vinegar, ginger, onion and garlic. Deep fried, the meat has a golden crust thanks to the caramelization of the sauce. It is crispy and tender at the same time, melting in your mouth into sweet and savory juice. Next time when you are at East Kitchen, try Guo Bao Pork instead of Sweet & Sour Pork for a change. Yum!

Dim Sum is one of the most unique offerings from Chinese cuisine. Served as brunch, a Dim Sum meal can start as early as 5am and last until mid-afternoon. A cart of bamboo steamers is pushed to customers round after round for customers to order from. Each steamer contains a dish in a snack-sized portion. Within a meal, 20 or more dishes can be consumed. The food must be accompanied by tea, which is why Dim Sum is also called “Yum Cha” (drinking tea) by the native Cantonese. Since the initial “one pot of tea and two steamers" in the 10th Century, over a thousand Dim Sum dishes have been developed. Some well-known ones include Steamed Prawn Dumplings (Har-Gow), Steamed Pork Dumplings (Shu Mai), Steamed Shanghai Dumplings (Xiao Long Bao), Steamed BBQ Pork Bun (Char-Sui Bao), Steamed Molten Salted Egg Custard Bun (Liu Sha Bao), and many more. You can find some of these popular Dim Sum dishes at East Kitchen. We invite you to come ‘drink tea’!

Kun Po (or Kun Bo) Chicken is one of the classic Szechuan dishes, invented over 100 yrs ago by the governor of Szechuan in the last dynasty of China. It is made with cubes of chicken and spring onions, peanuts, dried red chillies and Szechuan chilli peppers. What brings these ingredients to life is the marinade, which uses soy sauce, vinegar, Chinese cooking wine, and some other sauces, to give the dish a multi-layered flavour of sweet, savoury, tangy and spiciness. Kun Po Chicken is another highly recommended dish on our menu. East Kitchen preserves its authentic cooking method and flavour, and welcomes you to try it out!

In Chinese cuisine, palates, cooking styles and food ingredients used differ according to the geographic locations. There are 8 major variations representing the culinary traditions of North, South, East and West of China, although each variation has so much more diversity within itself. Among the 8 variations, Cantonese and Szechuan are widely-recognised. Cantonese cuisine is most popular worldwide, as it gives us the dishes we know Chinatown and Chinese restaurants for, such as Sweet&Sour Pork, Chow Mein, and Wonton Soup, while Szechuan cuisine is the best cherished across China, thanks to its bold flavours, particularly the pungency and spiciness resulting from liberal use of garlic, chili peppers, and the tongue-tingling Sichuan peppers. Watch this YouTube video to know more about the 8 Chinese culinary variations.

Do you know that traditional greeting between Chinese people is ‘have you eaten’? Equivalent to ‘hello’ and ‘how are you’, the expression is a demonstration of the role food plays in people’s life. No nation loves and invests more into food than the Chinese. This is a people who, throughout the history has seen food not only as a necessity in life, but a source of happiness, a way to health and longevity, a form of art, and the foundation of society. Good taste is simply not enought. Chinese cuisine highlights ‘color’, ‘form’, ’aroma’, ‘flavor’ and ‘asthaetics’ as the 5 key components making up the holistic experience of a dish.
