On film sets, the term “sub” for the second meal or late-night snack comes from the idea of a substitute meal.

Background
• First meal: Crew members usually get a proper hot meal after about six hours of work (often called “lunch,” regardless of the time of day).
• Second meal: If the shoot goes long and pushes past the next six-hour window, production is obligated to provide another meal. This second one is technically a substitute meal for what would have been a regularly scheduled meal at a normal time. Over time, that got shortened to “sub.”
