While the chicken baked in the oven I steamed russet potato wedges in the microwave. Then I added a bit of oil and Rosemary Garlic oven fries seasoning and broiled them in the oven. Rosemary is also great for mind health and focus, as well as an anti inflammatory and boosts immunity! Hello! We can all use immunity boosters right now, amiright??

For my mock air fryer I used our full sized sheet pan (with sheet pan liner) and our cooling racks to allow airflow and brown your meat and potatoes on all sides. Works like a charm and uses cookware that you already have!
