Grilled Potatoes with Bacon
Crispy on the outside, tender on the inside, and packed with smoky bacon flavor — these grilled potatoes are the perfect side dish for a barbecue or outdoor gathering. Finished with fragrant garlic-herb butter, they’re irresistibly delicious!
🥔 Ingredients
6–8 potatoes
200 g thinly sliced bacon
2–3 tbsp vegetable oil
Salt, to taste
Freshly ground black pepper, to taste
50 g butter, softened
2–3 garlic cloves
A small handful of fresh parsley and dill
Your favorite spices, to taste
Aluminum foil, for wrapping
🔥 Method
Prepare the potatoes.
Peel the potatoes and cut them into thick slices.
Assemble the skewers.
Thread the potato slices onto skewers, alternating them with strips of bacon, until the skewers are filled.
Season and wrap.
Drizzle the skewers with vegetable oil and season generously with salt and freshly ground black pepper. Wrap each skewer tightly in aluminum foil.
Grill over the coals.
Place the foil-wrapped skewers over hot coals and grill until the potatoes are tender and cooked through.
Get them crispy.
Carefully remove the foil and return the skewers to the grill. Cook over the open heat until the potatoes are beautifully golden and slightly crispy, and the bacon is nicely browned.
Make the garlic-herb butter.
Mix the softened butter with finely chopped parsley and dill, minced garlic, and your favorite spices.
Finish with butter.
Brush the hot potato and bacon skewers generously with the garlic-herb butter. Let it melt into the potatoes and bacon for an extra burst of flavor.
✨ Serve Hot
Serve straight from the grill while the potatoes are hot, crispy, and coated in that delicious garlic-herb butter. Perfect with grilled meat, fresh vegetables, and your favorite barbecue sauces!
