The Artisan collection is now officially available.

This release represents the culmination of five years of focused work on wild fermentation, tannin management, and barrel maturation. Our objective has been clear: to demonstrate that cider, when built with structural intent, is capable of extended aging and true vintage evolution.

Throughout this period, we have refined pressing protocols, fermentation control under native conditions, phenolic balance, and long-term élevage. Barrel selection and lot isolation have been critical in building ciders with sufficient acidity, texture, and tannin framework to develop over time rather than peak early.

This collection marks a milestone in that progression. It is also the foundation for what we believe will become the industry’s first disciplined, multi-decade vertical cider program — vintage-dated, cellar-worthy, and structurally consistent year over year.

We look forward to continuing the exploratory work ahead.

Our artisan ciders are made through a process of patience and restraint. After years of experimentation, we chose wild fermentation to develop the complexity needed to best showcase rare apple varieties. Fermented with native yeast and without adjustments to the must, each lot is monitored closely to ensure ferment quality remains intact.

We work with locally sourced apples, often uncommon varieties selected for structure and character rather than yield. Lots are fermented and aged separately, then blended with intention — not to chase sweetness or uniformity, but to express true fruit character. This approach defines Ironwood’s artisan program.

Wassail is Ironwood’s annual artisan release and marks five years of developing our natural cider program. These ciders are made entirely with wild fermentation, without cultured yeast, and with minimal intervention. Each release reflects a year of orchard conditions, fermentation, and aging rather than a fixed style or recipe. The focus is on balance, structure, and allowing the fruit to express itself without manipulation.

The ciders are produced using locally sourced, often rare apple varieties selected for structure, aroma, and complexity rather than yield. Individual lots are fermented separately, aged, and blended to express true fruit character rather than sweetness or overt acidity. Join us for an afternoon tasting of the 2026 artisan releases alongside light hors d’oeuvres by Niagara Fireside Drive, and an opportunity to explore how natural fermentation and careful blending shape our most limited ciders.

Our mezzanine is a flexible upstairs space used for exhibitions, tastings, and small events. The design is intentionally simple — white floors, black ceiling, open layout — so the room can adapt to whatever it needs to host. It stays functional and bright, supporting the main floor without trying to be a traditional gallery.

We’ve partnered with NOTL Contemporary, an art project focused on promoting young Niagara artists and the local creative movement. Ironwood has always been committed to supporting arts and creatives, and this collaboration brings that directly into the space. The work rotates throughout the year, so every visit feels different, and the mezz becomes a room shaped by the artists who use it.

People often ask whether cider is closer to beer, wine, or an RTD. The simple answer: it can function like any of them. Fermentation, structure, and finish depend on how it’s made, not the category people expect.

These images speak to that. Cider can be stable, sharp, light, or intense. It isn’t limited to one profile.

At Ironwood, we build clean bases through controlled fermentations and consistent cellar work. From there, the style can go dry, bright, textured, or easy-drinking. It’s flexible by design.

Cider doesn’t need to fit a predefined box. It can overlap multiple spaces without losing its identity. That’s the point — it’s a category defined by method, not assumptions.
