There are about four people who taught me pretty much what I know about the restaurant business over the years, the good and the bad, things that work and the things that don't work. I was really sad to hear of the untimely passing of one of the people who taught me a lot of what to do right - Robert Pearce. He was the first 'consultant' I ever worked with, and one of the first people I worked with who was very straight forward, spoke honestly about what he had to say, didn't mince words, and was kinda right all the time! Rob, possibly inadvertently, taught me pretty much all of what I know about how to cost recipes and menus, and how to ensure food programs are profitable. He also, again maybe inadvertently, showed me that working in restaurants is as much about 'doing', just getting things done, and doing it the right and logical way, as it is about some mystical, artistic creative thing. Cheers Rob, I probably never said thank you, so I'm going to have to say it now. No funny stories about crazy services, pranks or your brutally honest ways (and there are a bunch of those stories), just thank you.
