Sustainable? In my opinion, sous vide cooking is one of the best ways to cook meats. It's also great for pasteurizing food. Sous vide in a jar is a new technique for me. Seasoned, then sealed air tight in a vacuum chamber and submerged in the water bath to cook. No plastic and of course, the jars AND HARDWARE are REUSABLE. All you need is a new snap lid.
