Hello Chefs! Ready for a culinary adventure? 👉 Try the Watermelon Rind Curry 🍉

Let’s transform watermelon rinds into a delicious curry! Yes, you heard it right!
This innovative recipe is a fantastic way to reduce waste and discover new flavors!

Here’s what you’ll need:

Ingredients:
- 4 cups of watermelon rind
- 1 onion
- 4 cloves of garlic
- 1-inch piece of ginger
- 2 green chilies
- Spices: 1 tsp turmeric, 1 tsp salt, 1 tsp paprika, 1 tsp garam masala, 1/2 tsp black mustard seeds, 1/2 tsp cumin seeds

Instructions:
1. Prepare the watermelon rind by removing the green skin and pink flesh. Cut the white part into small pieces.
2. Puree the onion, garlic, ginger, and green chilies together.
3. Heat oil in a pan over medium heat. Add the mustard seeds and cumin seeds.
4. Once the seeds begin to splutter, add the puree and spices. Stir-fry until the raw smell disappears.
5. Add the watermelon rind and some water. Cover and cook for about 15 minutes or until the rind is tender.
6. Garnish with cilantro and serve hot.

Get ready to taste sustainable cooking at its finest!

Watermelon is a delicious, refreshing fruit, and with a little creativity, you can ensure zero waste. Here are some tips to prevent plate waste with watermelon:

🍉 Use every part: Watermelon flesh is obviously delicious, but did you know the rind and seeds can be used too? The rind can be pickled or candied, and the seeds can be roasted for a nutritious snack. We'll give you a creative recipe next week!
🍉 Create versatile dishes: From salads to sorbets and juices to jams, watermelon can be used in a variety of dishes. This versatility can help ensure none of it goes to waste.
🍉 Serve appropriate portions: Large portions often lead to more waste. Serve watermelon in appropriate portion sizes to reduce leftovers.
