Begin with tender Humboldt squid, gently confit in olive oil and paired with sweet grape tomatoes, briny Castelvetrano olives, capers, garlic, and a delicate touch of chilli. Next, savour silky conchiglioni pasta enveloped in creamy ricotta and Pecorino Romano, finished with crisp guanciale and a luxurious black pepper custard. The evening continues with succulent saltimbocca-style pork tenderloin, served alongside creamy chard eggplant polenta and luscious fig balsamic jam. To finish, indulge in a decadent dark chocolate crostata, balanced by delicate honey almond brittle and the unexpected richness of smoked gorgonzola gelato.
