The following is a general overview of the traditional Chinese black tea making process:

Withering: Freshly picked tea leaves are spread out and allowed to wilt for several hours in a cool and humid environment. This helps to reduce the moisture content and soften the leaves.

Rolling: The withered leaves are then rolled, either by hand or using a rolling machine, to break down the cell walls and release the enzymes needed for oxidation.

Oxidation: The rolled leaves are spread out in a cool and humid environment and left to oxidize for several hours. During this process, the enzymes in the leaves interact with oxygen in the air, causing the leaves to turn from green to brown and develop the characteristic flavor and aroma of black tea.
