From the Jungles of Costa Rica to Berlin in Germany: HiR Fine Dining is Spreading its Wings

2025 has made the COVID years seems like a gentle stroll in the park.

A few months ago, HiR Fine Dining, our restaurant nestled in the Costa Rican jungle, was victim of a long series of malicious attacks that led to the complete ban of all our social media accounts.

HiR Fine Dining is in the middle of nowhere, therefore social media wasn't just a marketing tool; it was our primary lifeline to patrons, our window to the world. Its abrupt removal was akin to severing a vital artery.

Bookings vanished, and the financial and personal toll was immense.

Just as we faced our darkest moment, a glimmer of hope arrived in an email from a former client: "Have you considered Berlin?"

This unexpected suggestion, coupled with my fiancée's Robin Espinoza enthusiasm, sparked a new vision.

Berlin is a global culinary hub with a thriving Michelin Guide presence, offering a platform for the international recognition I've strived for.

It presents a larger, more diverse market and opens up exciting opportunities for growth, including artisanal product lines, culinary training, and high-end catering.

Our confidence is rooted in a solid foundation of excellence: over nine years, HiR Fine Dining has maintained an impeccable record of guest satisfaction, achieving 98.89% "Excellent" reviews on TripAdvisor with zero negative feedback.

This distinction places us at the top when compared with many 3-Michelin-star restaurants in the US, Spain, and Germany.

Second visit -another wow

A journey to dine at Mercedes' home in the forest is an adventure. We visited in July 2023 and were glad to come back.

Visit her website to learn about her fascinating history. The seven course tasting menu is a surprise, although food restrictions can be accommodated. The visual elements and taste varieties are stunning.

A wonderful touch are courses accompanied by little balls of savory or herbed ice cream, not sweet. Mercedes herself is charming and fascinating. This is a luxury experience with a price to match, but well worth it if it is within your means.

And don't dare to try to drive yourself. It's out in the where GPS doesn't work well and you would never find your way home in the dark. Mercedes can recommend car services.

What made this experience so incredible was Mercy.

Mercy is one of the most genuine, hospitable, and passionate people I have ever met. Our family loves fine dining. We seek it out and drove almost an hour from Playa Conchal to have this meal.

We have eaten at many of the best restaurants in the world. I have never been invited to the chefs house to eat on the porch and had seven courses delivered in such a gracious, humble, and loving way.

Many restaurants claim farm to table dining but this was truly a meal that came from Mercy’s community, many ingredients from the yard surrounding the house.

Mercy cooked, plated, and delivered all seven courses without any help with perfect pacing. I have never seen anything like it. The food was excellent and Mercy is exceptional.
