Dark yellow butter is indicative of a cow that was likely grass-fed instead of grain-fed and butter that is rich in beta-carotene. Beta-carotene provides benefits such as supporting eye health, boosting the immune system, and acting as an antioxidant to protect against cell damage. It is converted into vitamin A in the body and can help improve skin health, reduce oxidative stress, and may lower the risk of certain chronic diseases.
Dark yellow butter is typically from grass-fed cows because their diet is rich in beta-carotene, which is then concentrated in the butterfat. This is generally an indicator of higher nutrient content.
▶️The Science Behind Butter Color:
📑Beta-carotene Source: Beta-carotene is a natural yellow pigment (the same pigment that makes carrots orange) found in abundance in fresh green grass and other pasture plants.
📑Cow’s Diet: When cows graze on pasture, they ingest this beta-carotene. The pigment is fat-soluble and is stored in the cows’ fat and carried into their milk.
📑Butterfat Concentration: While milk is mostly water and appears white, butter has a minimum of 80% fat content, which exposes the concentrated yellow beta-carotene pigment.
📑Grain-Fed Cows: In contrast, cows on a grain-based diet (e.g., corn or soy) consume much less beta-carotene, resulting in paler, almost white butter.

Dark yellow, grass-fed butter is considered by many to be healthier because its diet-dependent color indicates higher levels of beneficial nutrients, including:
