One of the biggest misconceptions about winemaking is that harvest happens on a fixed date. In reality, there's no set calendar.

Instead, our team closely monitors every vineyard block, tasting the grapes and measuring sugar, acidity, tannin and flavour to determine the perfect moment to pick. Each variety ripens at its own pace.
