Arlene (left) and Emily (right).
We are the duo behind Sublime Wine. Here is some more information on our backgrounds:

Our wines are curated by the internationally recognized Sommelier and Wine Educator, Emily Harman. Arlene Stein does everything else

Emily -

Emily Harman has 18 years experience in the hospitality industry and has worked in restaurants across the globe from the legendary River Cafe in London to Worlds 50 Best restaurant Attica in Melbourne Australia. With a deep passion for wines she has worked at wineries to learn more about vinification with artisan winemaker Tom Shobbrook in The Barossa Valley in 2011 and then to Tuscany to work with Sean O’Callaghan at Riecine in Gaiole in Chianti and most recently in Sierra de Gredos in Spain in 2018 with Dani Landi and Fernando Garcia at Commando G. Today Emily consults for Restaurants, Bars and Hotels across Europe, The UK and USA.

Arlene -

Arlene Stein has been working in food and beverage for the past 25 years. She loves the restaurant industry and her real passion is sustainable food systems and loves working with local producers – farmers, fishermen and winemakers. She is the founder of Terroir Hospitality , a platform that builds connections between restaurants, chefs and producers to help shape a better food system.

This news comes with a heavy heart but also full of lots of tope. I am no longer involved with ORA as managing director or partner.
I am so thankful for all the amazing team of people I have worked alongside to really make this beautiful spot: a great wine bar. I feel so lucky that the previous owners reached out to me when they decided they wanted to sell so that I had the opportunity to bring wine into such a stunning space. I’m really proud of all the hard work from everyone who really brought to life the concept that I had dreamed of for years. An extensive sommelier lead wine list with generous plates of food (not sharing plates) and a cosy unpretentious vibe.

In the new year I plan to start working on new projects with exciting people who share the same personal values and ethics as myself. I wish everyone at ORA the best for the future and I deeply hope it will be able to continue to be a place for great wine.

.berlin has some lovely unpretentious plates of food and a nice selection of really well priced wines.
Can’t wait to come back!
There are no good wine bars without the people with expertise and passion.
Last week I stopped by a conceptual wine bar which I will not name but it was very clear from the beginning that there was a huge gap in knowledge, unhappy staff and no passion. So often we focus on the wines themselves and forgot that the people who curate these places are just as much the treasure.

Last month I made a short trip to the island of Ikaria in the South Aegean in Greece.
Ikaria is a laid back, rural and friendly island. One of the worlds blue zones, famously known as the island of Longevity due to its long living population.
I absolutely loved that it is not set up for tourists, most of the roads are unsealed dirt roads and many of the restaurants and accommodation were already closed for the year.
There are three wineries on the island, we stayed at one of them: Karimalis, which is set in the hills in a 500 year old stone housing. Father and Husband George and his daughter Iliana make the wine and tend to the vines whilst Wife and Mother Eleni is constantly in the kitchen preparing food, baking bread and cakes, making pastry.
All of the ingredients are local or from the property. Meal times are convivial and communal - this is another staple of the Ikarian life style. The food prepared is typical local food, freshly made, varying from vegetarian, fish and local meat - the typical diet here would typically consist of 3 out of 9 days with fish, 3 with meat and 3 vegetarian. (Another example of how healthy, local food systems work and mean its not necessary to be vegan!).
All the wines are made from local organic grapes: Begleri and Fokiano, without any additives and using native yeasts.
The last photo I have posted is from Afianes winery, who still ferment some of them wines in the traditional way, in basically a granite lagar/palmento.
