By the 1990s, ramen had become a nationwide craze in Japan, and the wave reached Sapporo too — filling the city with every kind of ramen, not just Sapporo miso. Shop owners began developing their own signature flavors, ushering in an era of personalized ramen. And as they did, we grew with them — widening our own range of noodles to support every kind of bowl.

From around 1970, Sapporo ramen became a favorite souvenir for visitors to take home. By 1983, it had even entered Japan's postal gift catalog, sent as midsummer and New Year presents. Through these gifts, our noodles reached households across the whole of Japan.

Every Nishiyama noodle is produced in our factory in Japan.

We put craft and quality first — not speed, not volume. Every batch is certified to FSSC22000, the international food safety standard. Our factory is run by one of the highest concentrations of certified noodle masters in Japan, each holding Japan's national qualification for skilled noodle-making craftsmanship.

Craft and quality — that is how our noodles are made.

Seven shops, one street, and a roaring trade — Koraku Ramen Shop Street became the heart of Sapporo's ramen scene. When it made way for redevelopment, its spirit lived on: the Original Ramen Alley opened in 1971, followed by the New Ramen Alley in 1976. Both remain must-visit spots in Sapporo today.

We didn't start as a noodle company. We started as a ramen stall — one whose noodles became so popular that other ramen shops asked for them too. That's how we became a noodle maker: not by setting out to sell noodles, but by supporting the ramen shops around us.

That's still what drives us today. As a noodle maker, ramen restaurants are who we serve — so helping ramen culture grow is simply part of who we are.

That's why we still teach what we know — noodles, broth, and everything in between — for our partner restaurants.
