Frank John- Das Hirschhorner Weinkontor Biologisch- dynamisches Familienweingut ~ "Große Weine alter Schule" Diese vereinen Ausgewogenheit, Spiel mit Mineralität, Kraft und Fülle.

Inspiriert durch die Arbeit mit traditionellen Ausbaumethoden und Verarbeitungstechniken gelingt es uns, elegante und finessenreiche Weine herzustellen. Hierzu ist es unabdingbar, dass nur bestes, handverlesenes Traubengut aus biologisch dynamischem Anbau Verwendung findet. Oft bedarf es dazu mehrmaliger Lesevorgänge. Minimalistische Arbeit im Keller und langer Ausbau in Holzfässern lassen bekömmliche und ausgewogene Weine mit großem Reifepotenzial entstehen.

Simonit&Sirch pruning ensures that vines have a healthier and longer life. It defines shape to the structure of the vine, promoting healthy growth with controlled branching.
We concern the continuity of the sap flow, the pathway of translocation between the roots and the canopy, throughout the entire structure of the vine.
Respecting the crown (basal) buds by small cuts on one- or two-year-old wood. Precision pruning reduces the area of the exposed wound and the consequent desiccation.
An additional defense for the grape vine is spare wood. Always allowing a portion of protective wood when cutting on two-year-old wood or older wood, to reduce the effects of desiccation.

Just started pruning our premium vines this week ✂️ We don’t prune our beautiful vineyards before or during the „Raunächte“. This way we can guarantee a perfect start for our vines in 2026. All of our vineyards are pruned using the soft pruning method, also known as „low-wound pruning method“ established by . We do not use electric pruning scissors, but only manual pruning scissors. This will further improve the results. We are sure that this effort pays off not only in quality of the wines but also of the longevity of the vines.
