Meet Manto Negro: Mallorca’s own red grape.

It’s one of the island’s native reds, famous here, and a mystery almost everywhere else.
Es una de las tintas autóctonas de la isla: conocida aquí, y casi un misterio en el resto del mundo.
Look in the bucket and you’ll count several colours at once. A healthy Manto Negro bunch rarely ripens all one shade.
Mira dentro del cubo y contarás varios colores a la vez. Un racimo sano de Manto Negro casi nunca madura de un solo tono.
In this one, it’s simply the variety being itself, depending on the sun and the heat, some bunches turn deep red, others just ripen pale.
En esta uva es simplemente su forma de ser: según el sol y el calor, unos racimos se vuelven bien tintos y otros maduran pálidos.
All of a red wine’s colour comes from the skins, and Manto Negro’s are thin, with little pigment to give to the juice.
Todo el color de un tinto viene de la piel, y la de la Manto Negro es fina, con poco pigmento que dar al mosto.
It sweetens fast but colours slowly, so the fruit can be perfectly ripe while still looking half-green. But it’s not unripe.
Coge azúcar rápido pero color despacio, así que la uva puede estar en su punto y aún parecer medio verde. Pero no está verde.
Back at the cellar, the bunches are destemmed before they go on to ferment.
Ya en la bodega, los racimos se despalillan antes de pasar a fermentar.
Everything’s handled gently here, so the berries arrive whole rather than crushed on the way in.
Aquí todo se maneja con cuidado, para que las uvas lleguen enteras y no aplastadas por el camino.
Stems gone, just berries now, pale and dark side by side, exactly as they grew.
Sin raspón, solo las uvas: claras y oscuras juntas, tal y como crecieron.
From here it’s skins, juice and time until it becomes a rosé or a red. (Manto Negro is in both ADICCIóN and REBELIóN.)
