There are pairings that can be explained by chemistry and are understood from the very first sip.
Grilled goat cheese adds richness, a toasty note, and a hint of creaminess. The mojo verde sauce brings a fresh, herbaceous quality. And Dragoblanco, a young white w**e made from Listán Blanco grapes, provides the acidity that balances the whole dish: it cleanses the palate, lightens each bite, and allows the w**e’s fruit and floral notes to emerge at the finish.
One key factor: temperature. Between 8 and 10 °C, it maintains its tension on the palate without dampening the nose.
One w**e, one moment. This one—for the aperitif. 🧀
